What You’ll Need
- 1 cup warm milk (110 degrees F/45 degrees C)
- 2 tablespoons dry yeast
- 1/3 cup white sugar
- 2 large eggs
- 1/2 cup unsalted butter, softened
- 4 cups gluten-free all-purpose flour
- 1 teaspoon xanthan gum
- 1 teaspoon salt
- 1/2 teaspoon ground nutmeg
- 1 teaspoon grated lemon zest
- 1/2 cup finely chopped candied citron
- 1/2 cup finely chopped mixed candied fruit
- 1 plastic baby doll (optional)
- 1 large egg yolk
- 2 tablespoons milk
- 1 cup confectioners’ sugar
- 1 tablespoon lemon juice
- 2 tablespoons water
- Green, purple, and gold colored sugars
Method
Step One
In a large bowl, mix the warm milk, yeast and white sugar. Let it sit for about 10 minutes, or until the mixture is frothy. This allows the yeast to activate, which will help the dough rise.
Step Two
Add the eggs and butter to the yeast mixture and mix well. In a separate bowl, mix together the gluten-free flour, xanthan gum, salt, nutmeg, and lemon zest. Gradually add this mixture to the wet ingredients, stirring continuously until a dough forms.
Step Three
Stir in the chopped candied citron and mixed candied fruit. Once they’re evenly distributed throughout the dough, turn it out onto a floured surface and knead it for about 5 minutes, or until it’s smooth and elastic.
Step Four
Shape the dough into a large oval and place the plastic baby doll somewhere inside (this step is optional but traditional in some celebrations). Cover the dough with a clean kitchen towel and let it rise in a warm place for about 2 hours, or until it’s doubled in size.
Step Five
Preheat your oven to 375 degrees F (190 degrees C). In a small bowl, whisk together the egg yolk and 2 tablespoons of milk. Brush this mixture over the top of the risen dough.
Step Six
Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown on top. Let it cool completely on a wire rack.
Step Seven
While the cake is cooling, make the icing: mix together the confectioners’ sugar, lemon juice, and water until smooth. Once the cake is cooled, drizzle the icing over top, then sprinkle with the colored sugars.
