What You’ll Need

  • 2 Cups of gluten-free flour
  • 1 Teaspoon of salt
  • 1 Tablespoon of sugar

Method

Step One

Start by boiling the russet potatoes in a pot until they become tender. Drain the water and pass the potatoes through a ricer or mash them until they are free of lumps. Set them aside and let them cool.

Step Two

In a large mixing bowl, combine gluten-free flour, salt, sugar and xanthan gum. Mix these dry ingredients well until they are fully incorporated.

Step Three

Gradually add the lukewarm water into the flour mixture while stirring continuously. This process will slowly form a dough-like consistency. If the dough seems too wet, add a little more flour. If it’s too dry, add a bit more water.

Step Four

Step Five

Heat a flat griddle or skillet over medium heat. Cook each circle of dough for about 2 minutes on each side or until it turns light brown. Be sure to flip the lefse carefully to prevent it from breaking.
