What You’ll Need

  • 2 cups gluten-free all purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 2 eggs
  • 1 cup warm milk
  • 4 tablespoons unsalted butter, melted
  • 1 teaspoon xanthan gum (optional, but recommended for better texture)
  • Additional melted butter for brushing on top

Method

Step One

First, gather all of your ingredients. You will need gluten-free all purpose flour, sugar, active dry yeast, salt, eggs, warm milk, unsalted butter, xanthan gum and additional melted butter for brushing.

Step Two

In a large mixing bowl, combine the gluten-free flour, sugar, yeast and salt. Stir well to combine. Then, make a well in the center of this mixture.

Step Three

In a separate bowl, beat the eggs lightly. Then, pour them into the well you’ve formed in your dry ingredients. Add the warm milk and melted butter as well, stirring well to combine. Continue to stir until you have a smooth batter.

Step Four

If you’re using the optional xanthan gum for better texture, now’s the time to add it. Sprinkle it evenly across your batter, then stir until it’s thoroughly combined.

Step Five

Turn out your batter onto a floured surface and knead it gently until it’s smooth and elastic. Then, shape it into a ball, place it back in your bowl, cover it with a clean cloth, and let it rise in a warm place until it’s doubled in size (about 1 to 1.5 hours).

Step Six

Preheat your oven to 375 degrees F (190 degrees C). Then, punch down your dough and divide it into your desired number of rolls. Arrange these rolls on a greased baking sheet, then brush them with the additional melted butter.

Step Seven

Bake your rolls in the preheated oven for about 15 to 20 minutes, or until they’re golden brown on top. Then, remove them from the oven and let them cool on a wire rack.
