About Gluten-Free Obi Non

Unveiling our latest gem in the daily bread repertoire – the Gluten-Free Obi Non! With its roots in Central Asia, this exquisite bread combines the wholesomeness of ancient Uzbek culinary heritage with the dietary harmony of gluten-free ingredients.

Rustic, golden Gluten-Free Obi Non

This traditionally-styled bread hails from the vibrant cultures of Uzbekistan and Tajikistan where it has been a staple for centuries. However, our version of Obi Non takes an innovative detour in nutritional mapping. Sticking true to the aesthetics of the classic Obi Non, but reimagining its core ingredients to bring forth a gluten-free version, this bread can now be savored by those maintaining a careful balance in their dietary intake.

Where Old Tradition Meets New Approach

What sets our Gluten-Free Obi Non apart is its distinctive combination of gluten-free all-purpose flour and buckwheat flour. While the former provides the needed-lightness to the dough, the latter imparts a unique nutty aroma and depth of flavor. The dough is tenderized further by the addition of non-fat milk, while the raw sugar brings a subtle sweetness to this savory masterpiece.

Every bite of this bread is an experience – the stimulating fragrance of yeast, the hidden hint of olive oil, and the delicate crumble ensured by the use of xanthan gum, all blend together in perfect harmony. The eggs add both structure and richness, making each slice a delectable treasure trove of textures and flavors.

A Perfect Accomplice to A Variety of Dishes

An Obi Non, with its unique composition and inviting taste, goes best with a wide array of dishes. Much like the traditional Naan, Gluten-Free Obi Non can perfectly compliment your favorite curry or soup. Try it alongside vegan stews or bean dips for a high-protein meal, or even with some light salad to add a rustic touch to your modern healthy fare.

For those with a daring palate, let this bread be the canvas to your creative food paintings. Top it off with a liberal sprinkle of optional sesame or nigella seeds before baking to add that extra bit of crunch and pop of flavor. Let the Gluten-Free Obi Non take the spotlight in your next feast, adding a delightful touch of exotic fare to your traditional home-cooked spread.

In a world where traditional recipes are often forgotten amidst rapid food evolution, our Gluten-Free Obi Non stands as testament to the magical merge of ancient cooking wisdom with modern dietary needs. We hope this bread brings you not just nutritional comfort, but also a taste of timeless culinary traditions from the heart of Central Asia. Bon appétit!

What You’ll Need

  • 1.5 cups of gluten-free all-purpose flour
  • 1/2 cup of gluten-free buckwheat flour
  • 1/2 cup of non-fat milk
  • 1/4 cup of raw sugar
  • 2 teaspoons of yeast
  • 1/2 teaspoon of Xanthan gum
  • 1/2 teaspoon of salt
  • 1 tablespoon of olive oil
  • 2 large eggs
  • 1/2 tablespoon of sesame seeds (for topping, optional)
  • 1/2 tablespoon of nigella seeds (for topping, optional)
ALLERGENS: non-fat milk, eggs

Method

Step One

In a large mixing bowl, combine the gluten-free all-purpose flour, gluten-free buckwheat flour, yeast, Xanthan gum, and salt. Mix these ingredients together until they are well combined.

Step Two

In a separate bowl, whisk together the non-fat milk, raw sugar, and olive oil. Once these ingredients are fully combined, add the eggs and continue to whisk until the mixture is smooth.

Step Three

Gradually add the wet ingredients into the dry ingredients while stirring. Continue mixing until a dough starts to form. If the dough is too sticky, add a bit more gluten-free all-purpose flour until it reaches the right consistency.

Step Four

Transfer the dough onto a lightly floured surface and knead it for about five minutes.

Step Five

Place the kneaded dough in a greased bowl, cover with a damp cloth and allow it to rise in a warm place for about two hours, or until it doubles in size.

Step Six

Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a baking sheet with parchment paper.

Step Seven

Divide the dough into two equal parts and shape each one into a round flatbread. Place them on your prepared baking sheet.

Step Eight

Optional: Sprinkle the flatbreads with sesame seeds and nigella seeds.

Step Nine

Bake in the preheated oven for about 15-20 minutes, or until the flatbreads become golden brown.

Step Ten

Allow your Gluten-Free Obi Non to cool for a few minutes before serving. Enjoy!
