An Exquisite Blend of Ingredients
So what goes into making a Gluten-Free Onion Roll? Our recipe relies on gluten-free all-purpose flour, the elasticity of xanthan gum and the leavening power of yeast. A touch of sugar aids fermentation and amplifies the flavor, while finely chopped onions lend a rustic aroma and a savory zing. The dough gets a natural moisture balance with warm water and olive oil, while the egg whites enrich the protein content. Lastly, we have the magic of apple cider vinegar – a surprising touch that subtly enhances the overall flavor profile.

The Gluten-Free Onion Roll shares flavor notes with Jewish Bialys and Italian Focaccia, owing to the delectable nuance of onion. Yet, it proudly stands apart due the absence of gluten. What You’ll Need

- 1.25 teaspoons of xanthan gum (If it’s not already included in the flour)
- 2 tablespoons of sugar
- 1.5 teaspoons of yeast
- 1/2 teaspoon of salt
- 1/2 cup of finely chopped onions
- 1 cup of warm water (110 degrees F/45 degrees C)
- 2 tablespoons of olive oil
- 2 egg whites
- 1/2 teaspoon of apple cider vinegar
Method
Step One
In a bowl, combine the gluten-free all-purpose flour, xanthan gum (if it’s not included in the flour), sugar, yeast and salt. Mix together until well combined.
Step Two
Add in the finely chopped onions and stir together with the dry ingredients.
Step Three
In a separate bowl, combine the warm water, olive oil, egg whites and apple cider vinegar. Whisk these ingredients together until everything is well combined.
Step Four
Slowly pour the liquid ingredients into the bowl with the dry ingredients. Using a spatula or a wooden spoon, mix together until the mixture has formed a sticky dough.
Step Five
Preheat your oven to 375 degrees F (190 degrees C) and prepare a baking pan by greasing with a little olive oil or lining it with parchment paper.
Step Six
Divide the dough into equal-sized balls and place them on the prepared baking pan. Let the rolls rise in a warm place for about 45-60 minutes until they’ve doubled in size.
Step Seven
Bake the rolls in the preheated oven for about 20-25 minutes or until they become golden brown.
Step Eight
Remove the rolls from the oven and let them cool before serving.
