Gluten-Free Pan Dulce

A Recipe Catered to Gluten-Free Needs

Gluten-free all purpose flour, almond flour, and coconut flour form the base of this recipe, with a touch of xanthan gum adding elasticity to the dough. Balanced with the right quantity of yeast, this bread maturation process is quite similar to that of a traditional wheat-based loaf. A blend of dairy or a dairy substitute, unsalted butter, and eggs account for the soft, moist crumb, while apple cider vinegar works to tenderize our gluten-free flours.

What You’ll Need

  • 2 cups gluten-free all purpose flour
  • 1/2 cup almond flour
  • 1/4 cup of coconut flour
  • 1 tablespoon xanthan gum
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 1 tablespoon active dry yeast
  • 1/2 cup warm water
  • 1/2 cup milk or dairy-free substitute
  • 3 tablespoons unsalted butter, melted and cooled
  • 2 large eggs, room temperature
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon vanilla extract
  • 1/2 cup assorted colored sugars for topping
ALLERGENS: Almonds, Milk, Eggs, Coconut

Method

Step One

Begin by preheating your oven to 375 degrees Fahrenheit. Meanwhile, in a large bowl, combine the gluten-free all purpose flour, almond flour, coconut flour, xanthan gum, salt, and sugar. Set this aside.

Step Two

Next, in a smaller bowl, whisk together the yeast and warm water until the yeast has fully dissolved. Let it sit for around 5 minutes, or until the mixture is frothy.

Step Three

In another bowl, combine the milk, melted and cooled butter, eggs, apple cider vinegar, and vanilla extract. Mix these well. After the yeast mixture has frothed, add this to the milk and eggs mixture.

Step Four

Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring as you pour. Make sure all the ingredients are well incorporated. The dough should be sticky but manageable. If it’s too dry, you can add more milk or water. If it’s too wet, add more of the all-purpose flour.

Step Five

Once the dough has been formed, form small, round dough pieces and place them on a baking sheet lined with parchment paper.

Step Six

Bake the dough pieces in the preheated oven for about 20 minutes, or until they turn golden brown. Be sure to check them periodically to avoid burning them.

Step Seven

After baking, remove the pan dulces from the oven and allow them to cool on a wire rack. Once they have cooled, sprinkle the colored sugars on top for decoration. Serve and enjoy your gluten-free pan dulce!
