About Gluten-Free Pane Carasau

Gluten-Free Pane Carasau is an Italian bread, originally hailing from the beautiful region of Sardinia where it’s known as the bread of the shepherds. As thin as a sheet of paper, it’s a nutritious, versatile choice that caters perfectly to those who are on a gluten-free diet. This Sardinian culinary wonder has subtle earthy flavors that are enriched by a pinch of salt, the sweetness of sugar, and an added depth from the olive oil.

The Art of the Gluten-Free Pane Carasau

The creation process of Gluten-Free Pane Carasau is quite an art. The dough entails a blend of gluten-free flour and delicate balance of xanthan gum. The yeast added gives the dough the perfect amount of fluff, elevating its taste and texture. Warm water helps to kickstart the yeast producing process, while baking powder ensures that the treat rises to perfection. The sugar added enhances the flavor subtly, while the touch of olive oil helps the bread to realize its signature soft yet crunchy texture. Gluten-Free Pane Carasau

What You’ll Need

  • 2 cups Gluten-free flour blend
  • 1 tbsp Xanthan Gum (if your blend doesn’t contain it)
  • 2 tsp Instant Yeast
  • 1 tsp Salt
  • 1 tsp Baking Powder
  • 1 cup Warm Water (around 110F to 115F)
  • 2 tsp Granulated Sugar
  • 1 Tbsp Olive oil
ALLERGENS: None

Method

Step One

Begin by gathering all your ingredients together. Ensure your water is warm, but not too hot as this can kill the yeast. The temperature should be approximately 110F to 115F.

Step Two

In a large bowl, combine your gluten-free flour blend, xanthan gum (if your blend does not already contain it), instant yeast, salt, and baking powder. Mix these together until they are well combined.

Step Three

In a separate container, combine your warm water and granulated sugar. Stir until the sugar is completely dissolved. This is going to act as your yeast “food”, helping it to activate.

Step Four

Slowly incorporate your sugar water into your dry ingredients, stirring as you go along. You want to mix until the dough begins to form. This might be a bit of a sticky process due to the gluten-free flour.

Step Five

Once your dough has formed, add in your tablespoon of olive oil. Mix this well into the dough. This will add in some moisture and give your bread a nice, subtle flavor.

Step Six

Turn the dough out onto a lightly floured surface and knead for about 10 minutes, or until the dough is smooth and elastic. Once done, place the dough back into the bowl, cover and leave to rise for about 45 minutes to 1 hour, or until the dough has roughly doubled in size.

Step Seven

Preheat your oven to 400F (200C). Divide your dough into equal parts and roll each into thin discs. Place these on a baking sheet lined with baking paper.

Step Eight

Bake in the preheated oven for about 10 to 15 minutes, or until the bread is lightly golden brown on top. Once done, remove from the oven and allow to cool before serving.
