What You’ll Need
- 1 cup warm water
- 1 tablespoon sugar
- 1 packet dry yeast
- 3 cups gluten-free all-purpose flour
- 1/4 cup almond flour
- 1 teaspoon xanthan gum
- 1/2 teaspoon salt
- 5 large eggs
- 1/3 cup honey
- 1/2 cup unsalted butter, melted
- 1 tablespoon vanilla extract
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 1/2 cup dried cherries
- 1/2 cup dried cranberries
- 1/2 cup candied citron or lemon peel
- 1/2 cup sliced almonds
Method
Step One
Start by activating the yeast. Combine 1 cup of warm water, 1 tablespoon of sugar, and 1 packet of dry yeast in a bowl. Let this stand for 5 to 10 minutes until it becomes frothy.
Step Two
In a separate large bowl, combine the 3 cups of gluten-free all-purpose flour, 1/4 cup almond flour, 1 teaspoon xanthan gum, and 1/2 teaspoon salt. Whisk these dry ingredients together until they are well combined.
Step Three
In another bowl, beat 5 large eggs. Add the beaten eggs, 1/3 cup of honey, 1/2 cup of melted unsalted butter, 1 tablespoon of vanilla extract, 1 tablespoon of lemon zest, and 1 tablespoon of orange zest to the bowl with the dry ingredients.
Step Four
Pour in the yeast mixture to the above and stir all of the ingredients until they are evenly mixed.
Step Five
Once the dough is combined, fold in the dried fruits and nuts – 1/2 cup of dried cherries, 1/2 cup of dried cranberries, 1/2 cup of candied citron or lemon peel, and 1/2 cup of sliced almonds.
Step Six
Place the dough in a greased panettone dish or mold. Let it rise in a warm place for around 1-2 hours, or until it has doubled in size.
Step Seven
While the dough is resting, preheat the oven to 350 degrees Fahrenheit.
Step Eight
Once dough finishes resting, place it in the preheated oven and bake for 40 to 50 minutes or until golden brown, and a skewer inserted into the center comes out clean.
Step Nine
Allow the panettone to cool in the tin before removing it. Once cool, enjoy your homemade gluten-free panettone!
