About Gluten-Free Paunzen
Origins and Inspiration
The Gluten-Free Paunzen has a simple, humble, yet richly textured history. Inspired by centuries-old European baking traditions, it’s a true incarnation of their ethos of eating healthily, but not compromising on the pleasure of savoring good food. Similar to its closely-associated cousin, the traditional Paunzen, this gluten-free variant carries a delectable mix of flavors and densely satisfying textures.
Flavors and Texture
The beautiful interplay of flours in this bread lends it a unique, pleasurable character and a physicist palate. With brown rice, white rice, almond, tapioca and potato starch dancing in harmony, the Gluten-Free Paunzen provides a granular, slightly sweet, and hearty tone that leaves you desiring more. Each ingredient serves a tasty purpose, and when combined, create a loaf that’s both flavorful and nutrient-dense. The subtle hints of sweetness from the honey and the tart undertone from apple cider vinegar balance the flavors perfectly, making this bread irresistible.
Perfect Pairings
The Gluten-Free Paunzen is an excellent accompaniment to a variety of dishes. Try it with a hot bowl of Creamy Zucchini Soup for a delightful, warming experience, or pair it with a fresh mixed greens salad tossed in a refreshing vinaigrette. This bread is equally tasty when served with a hearty Roasted Chicken or a plate of Charcuterie.
Our Gluten-Free Paunzen also works wonderfully as a healthy alternative for your breakfast toast, sandwich bread or simply to be enjoyed in its purest form – spread with a little grass-fed butter.
The health-conscious kitchen gourmand can undoubtedly rely on the Gluten-Free Paunzen as a staple part of their culinary adventures. It’s a bread that’s gentle for those with dietary restrictions and bursting with flavors that will please any set of taste buds.
What You’ll Need
- 1 cup warm water (110° F)
- 1 tablespoon white sugar
- 2.25 teaspoons active dry yeast
- 1 cup brown rice flour
- 1/2 cup potato starch
- 1/2 cup almond flour
- 1/4 cup white rice flour
- 1/4 cup tapioca flour
- 1.5 teaspoons xanthan gum
- 1 teaspoon salt
- 2 eggs, beaten
- 2 tablespoons olive oil
- 1 teaspoon apple cider vinegar
- 2 tablespoons honey
Method
Step One
Combine 1 cup warm water and 1 tablespoon white sugar in a bowl, stirring until the sugar is completely dissolved.
Step Two
Stir in 2.25 teaspoons of active dry yeast into the warm water and sugar mixture. Leave it to sit for about 10 minutes, or until the yeast becomes frothy.
Step Three
In a large bowl, combine 1 cup brown rice flour, 1/2 cup potato starch, 1/2 cup almond flour, 1/4 cup white rice flour, 1/4 cup tapioca flour, 1.5 teaspoons xanthan gum, and 1 teaspoon salt. Mix these dry ingredients well.
Step Four
To the yeast mixture, add 2 beaten eggs, 2 tablespoons olive oil, 1 teaspoon apple cider vinegar, and 2 tablespoons honey. Stir well to combine.
Step Five
Gradually add the dry ingredients into the wet mixture, stirring continuously until well combined.
Step Six
Cover the mixture with a cloth and let it rest in a warm place to rise for approximately 1 hour or until the dough has nearly doubled in size.
Step Seven
Preheat the oven to 375 degrees Fahrenheit (or 190 degrees Celsius). Pour the dough into a greased loaf pan.
Step Eight
Bake in the preheated oven for approximately 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
Step Nine
Remove the bread from the oven and allow it to cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely. Your gluten-free Paunzen is now ready to be enjoyed!
