What You’ll Need

  • 1 cup warm water (110° F)
  • 1 tablespoon white sugar
  • 2.25 teaspoons active dry yeast
  • 1 cup brown rice flour
  • 1/2 cup potato starch
  • 1/2 cup almond flour
  • 1/4 cup white rice flour
  • 1/4 cup tapioca flour
  • 1.5 teaspoons xanthan gum
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 2 tablespoons olive oil
  • 1 teaspoon apple cider vinegar
  • 2 tablespoons honey

Method

Step One

Combine 1 cup warm water and 1 tablespoon white sugar in a bowl, stirring until the sugar is completely dissolved.

Step Two

Stir in 2.25 teaspoons of active dry yeast into the warm water and sugar mixture. Leave it to sit for about 10 minutes, or until the yeast becomes frothy.

Step Three

In a large bowl, combine 1 cup brown rice flour, 1/2 cup potato starch, 1/2 cup almond flour, 1/4 cup white rice flour, 1/4 cup tapioca flour, 1.5 teaspoons xanthan gum, and 1 teaspoon salt. Mix these dry ingredients well.

Step Four

To the yeast mixture, add 2 beaten eggs, 2 tablespoons olive oil, 1 teaspoon apple cider vinegar, and 2 tablespoons honey. Stir well to combine.

Step Five

Gradually add the dry ingredients into the wet mixture, stirring continuously until well combined.

Step Six

Cover the mixture with a cloth and let it rest in a warm place to rise for approximately 1 hour or until the dough has nearly doubled in size.

Step Seven

Preheat the oven to 375 degrees Fahrenheit (or 190 degrees Celsius). Pour the dough into a greased loaf pan.

Step Eight

Bake in the preheated oven for approximately 35-40 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.

Step Nine
