Welcome to the tantalizing world of Gluten-Free Piadina, a bread so exquisite that it effortlessly bridges the gap between gastronomic delight and healthy, allergy-friendly fare. The Art Behind Gluten-Free Piadina

Just as with its non-gluten-free counterpart, our Piadina has that perfect blend of crispness and chewiness, thanks to a carefully balanced mix of gluten-free all-purpose flour, xanthan gum, baking powder and salt. Extra virgin olive oil, another key ingredient, provides a softness and mild richness to the bread.

The water and olive oil create a pliable dough, which after a quick kneading, transforms into your own homemade disc of bread heaven. This dough mixture’s vibrant mélange of textures and subtle flavors not just rivals but even surpasses, its gluten-contained relative, affirming the belief that going gluten-free does not mean skimping on gastronomical gratification.

Meals to Pair with Your Piadina

Traditionally, Piadina is served folded over with various fillings such as cured meats, cheeses, and even Nutella for a sweet twist. However, our gluten-free version can also be sliced into wedges and used for scooping up dips like hummus or guacamole, like a gluten-free alternative to paratha or naan bread.

If you are a fan of sandwiches, why not use this Gluten-Free Piadina to create an avocado and chicken sandwich? Or for a light lunch, fill it with a salad mix tossed with your favorite dressing. The options are numerous and endlessly customizable to your own dietary preferences and whims.

In a nutshell, Gluten-Free Piadina is more than just a bread, it’s a celebration of savor and health, and a testament to the creativity of gluten-free cooking. A must-try for anyone and everyone!

What You’ll Need

  • 2 cups gluten-free all-purpose flour
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 1/4 cup olive oil
  • Extra virgin olive oil for brushing (optional)
ALLERGENS:

Method

Step One

Combine 2 cups of gluten-free all-purpose flour, 1 teaspoon of xanthan gum, 1/2 teaspoon of baking powder, and 1/2 teaspoon of salt in a large mixing bowl. Stir well to evenly distribute all the ingredients.

Step Two

Create a well in the center of the dry mixture. Pour 1/2 cup of water and 1/4 cup of olive oil into this well.

Step Three

Slowly mix the wet and dry ingredients together. Stir until a dough begins to form. If the dough feels too dry, add a few extra drops of water.

Step Four

Once the dough forms, knead it on a floured surface for about 2 minutes. Then, divide the dough into smaller balls roughly the size of a golf ball.

Step Five

Flatten these balls with a rolling pin to create thin, round disks. If desired, brush the disks with extra virgin olive oil to give them a nice sheen and to enhance the flavor.

Step Six

Cook the piadinas on a hot skillet or griddle until they begin to bubble and brown on each side. This should take about 1-2 minutes per side.

Step Seven

Transfer the cooked piadinas to a plate and cover them with a towel to keep them warm until serving. Enjoy your homemade gluten-free piadinas!
