Then, staple baking ingredients like salt and sugar make an appearance, bringing their ultra-important seasoning and caramelization powers. Warm water, olive oil, and rice flour all contribute to the texture, and an egg yolk glaze ensures a beautiful, glossy finish. Sesame seeds, although optional, add a delightful crunch.

What You’ll Need

  • 3 cups Gluten-Free Bread Flour
  • 1 packet (or 2 1/4 teaspoons) of Gluten-Free Yeast
  • 1 1/2 teaspoons of Salt
  • 1 teaspoon of Sugar
  • 1 1/2 cups of Warm Water
  • 1 teaspoon of Olive Oil
  • 2 tablespoons of Rice Flour (for dusting)
  • 2 Egg Yolks (for glaze)
  • 1 tablespoon of Sesame Seeds (optional)
ALLERGENS: Egg

Method

Step One

Start by combining the bread flour, yeast, salt and sugar in a large mixing bowl. Make sure that these dry ingredients are well mixed together.

Step Two

In the next step, slowly add the warm water into the flour mixture while stiring it steadily. This would form your dough. Use your hands to knead if necessary but be sure the water is not too hot to hurt your hands.

Step Three

Next, drizzle the olive oil over the dough and continue to knead for about 5-10 minutes, or until the dough becomes smooth and slightly elastic.

Step Four

Cover the dough with a clean kitchen towel and place in a warm area to rise for approximately 2 hours, or until it doubles in size.

Step Five

Preheat your oven to 475 degrees F (245 degrees C) and line a baking sheet with parchment paper. Sprinkle the rice flour over the parchment paper to prepare for the dough.

Step Six

After the dough has risen, punch it down and divide it into two equal parts. Shape each part into an oval-shaped flatbread, about 1/2 inch thick and place them on the prepared baking sheet.

Step Seven

Beat the egg yolks in a small bowl. Brush each flatbread with the beaten egg yolk and sprinkle the sesame seeds on top if desired.

Step Eight

Finally, bake the pide in the preheated oven for 15-20 minutes, or until golden brown. Allow to cool before slicing and serving. Enjoy your homemade gluten-free pide!
