  • 1/4 cup of vegetable oil
  • 1 teaspoon of cider vinegar
  • 1 egg yolk combined with 1 tablespoon of water for egg wash
  • 2 tablespoons of sesame seeds for topping (optional)

Method

Step One

Firstly, combine the gluten-free flour, xanthan gum (if your flour doesn’t already contain it), salt, sugar and yeast in a large bowl. Make sure everything is thoroughly mixed together.

Step Two

Next, in a smaller bowl or jug, combine the warm water, large egg, vegetable oil and cider vinegar. Make sure the water is approximately 110 degrees Fahrenheit as this is the ideal temperature to activate yeast. Stir these elements until they are well combined.

Step Three

Pour the liquid mixture into the flour mixture, stirring well to combine. Once your dough has formed, give it a quick knead in the bowl to make sure all ingredients are thoroughly incorporated.

Step Four

Next, cover the bowl with a clean towel and leave your dough to rest at room temperature. This will take about an hour. During this time, your dough will rise as the yeast activates.

Step Five

After the dough has rested and risen, divide it into smaller pieces and shape into round pogača. Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius) and prepare a baking sheet by lightly greasing it.

Step Six

Place your shaped pogača onto the baking sheet, ensuring they are evenly spaced. Brush each piece with the egg wash (egg yolk combined with water) for a shiny, golden finish. If you wish, sprinkle sesame seeds over the top at this stage for an optional crunch.
