What You’ll Need

  • 1 1/2 cups warm water
  • 1 tablespoon sugar
  • 2 teaspoons active yeast
  • 2 cups Gluten-Free all-purpose flour
  • 1 cup Gluten-free bread flour
  • 1 teaspoon sea salt
  • 1 teaspoon xanthan gum
  • 2 tablespoons unsalted butter, melted
  • 1 large egg
  • 1 tablespoon white vinegar
  • For boiling:
    • 8 cups water
    • 1/4 cup baking soda
  • For topping:
    • 1 large egg yolk beaten with a tablespoon of water
    • Coarse sea salt

Method

Step One

Start by activating yeast. Combine 1 1/2 cups of warm water and 1 tablespoon of sugar, stirring until dissolved. Add 2 teaspoons of active yeast, stir and leave it to sit for about 5 minutes or until the mixture starts to froth.

Step Two

In a large bowl, combine 2 cups of gluten-free all-purpose flour, 1 cup of gluten-free bread flour, 1 teaspoon of sea salt, and 1 teaspoon of xanthan gum. Mix the dry ingredients together well.

Step Three
