What You’ll Need

  • 1 1/2 cups gluten-free all-purpose baking flour
  • 1/2 cup cornstarch
  • 2 teaspoons xanthan gum
  • 1 teaspoon salt
  • 2 teaspoons active dry yeast
  • 2 tablespoons sugar
  • 1 1/4 cups warm water (110°F to 115°F)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon apple cider vinegar
  • 3 large egg whites, at room temperature
ALLERGENS: cornstarch, yeast, eggs

Method

Step One

Begin by gathering all your ingredients. Make sure your egg whites are at room temperature as this will affect the end result of your loaf.

Step Two

In a large bowl, combine the gluten-free all-purpose baking flour, cornstarch, xanthan gum, and salt. Stir until these dry ingredients are well mixed.

Step Three

In another bowl, dissolve the active dry yeast and sugar in the warm water. Make sure the water is between 110°F and 115°F, as anything hotter or cooler may affect the yeast’s ability to rise. Let this mixture sit for about 5 minutes, or until it’s frothy.

Step Four

Once the yeast mixture is ready, add it to the dry ingredients. Also add extra-virgin olive oil, apple cider vinegar, and the egg whites. Ensure that the egg whites are incorporated fully into the dough.

Step Five

Mix the dough thoroughly. It may be a bit stickier than traditional wheat-based bread doughs. Just ensure that all ingredients are fully mixed and evenly distributed.

Step Six

Transfer the dough to a greased Pullman loaf pan. Smooth the top of the dough with a spatula soaked in warm water.

Step Seven

Let the dough rise in a warm place for about an hour, or until it’s doubled in size.

Step Eight

Preheat your oven to 375°F. Once the dough has risen and your oven is heated, carefully place the loaf pan in the oven.

Step Nine

Bake for 25-30 minutes, or until the top of the loaf is golden brown and a toothpick inserted into the center comes out clean.

Step Ten

Remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, remove it from the pan and let it cool completely on a wire rack.

Step Eleven

Once your loaf is completely cooled, slice it and enjoy your delicious Gluten-Free Pullman Loaf.
