What You’ll Need
- 1 cup Millet Flour
- 1 cup Rice Flour
- 1.5 tsp Xantham Gum
- 1/2 tsp Salt
- 1 cup Warm Water
- 1 cup Jaggery
- 1 cup Split Chickpeas (Chana Dal), cooked and mashed
- 1 tsp Cardamom Powder
- 1/2 tsp Nutmeg Powder
- 1/2 cup Ghee (Clarified Butter)
Method
Step One
Begin by mixing both types of flour, Xantham Gum, and Salt in a large bowl until well combined. This mixture will form your dough base.
Step Two
Add Warm Water gradually to the flour mixture. Knead the mixture well until it forms into a smooth, non-sticky dough. Cover the dough and let it rest for some time.
Step Three
While the dough is resting, prepare the filling. To do this, heat a pan and add Jaggery to it. Melt the Jaggery over low heat.
Step Four
Once the Jaggery is fully melted, add Cooked and Mashed Chana Dal to the pan. Stir well until both ingredients combine thoroughly.
Step Five
Add Cardamom Powder and Nutmeg Powder to the Chana Dal-Jaggery mixture. Stir well and set the mixture aside to cool.
Step Six
Once the filling has cooled down, divide it into equal portions. Set these aside.
Step Seven
Divide the dough into equal portions as well, making sure they are the same number as your filling portions.
Step Eight
Take one portion of the dough and roll it out into a small circle. Put one portion of the filling into the center of the circle and fold the edges in to make a round ball. Flatten this ball and roll it out to make a thin and flat round shape, similar to a pancake.
Step Nine
Preheat a pan on medium heat. Lay the rolled out Puran Poli on the pan and cook till it turns lightly golden on both sides. Use Ghee (Clarified Butter) to cook these.
Step Ten
Repeat these steps with the remaining portions until all your Puran Polis are prepared. Serve hot and enjoy this gluten-free delicacy.
