What You’ll Need
- 3 cups of Gluten-Free Flour
- 1 1/2 cups of Water
- 1 teaspoon of Salt
- 2 tablespoons of Olive Oil
- 1/2 pound of ground Lamb or Beef
- 1 large chopped Onion
- 1 finely chopped Garlic clove
- 1/2 teaspoon of Black Pepper
- 1/2 teaspoon of ground Cumin
- 1/2 cup of chopped fresh Cilantro
Method
Step One
Combine the gluten-free flour, salt, and water in a mixing bowl. Stir until a dough forms, then knead it on a lightly floured surface for a couple of minutes until smooth. Cover the dough with a clean kitchen towel and let it rest for 30 minutes.
Step Two
While the dough is resting, prepare the filling. Heat 1 tablespoon olive oil in a pan over medium heat. Add the chopped onion, and sauté until it becomes translucent. Add the minced garlic to the pan and continue to cook for another couple of minutes.
Step Three
Add the ground lamb or beef to the pan. Cook, breaking up the meat with a spoon, until it is browned and cooked through. Drain off any excess fat.
Step Four
Season the meat with black pepper and cumin. Stir in the chopped fresh cilantro and remove the pan from heat.
Step Five
Divide the rest dough into small balls, about golf-ball size. Roll each ball out on a lightly floured surface into a thin circle. Put a small amount of the meat mixture on one half of the circle, leaving a little edge to seal. Fold the other half over the filling and press the edges together to seal.
Step Six
Heat the remaining olive oil in a large pan over medium heat. Cook each qistibi until golden brown on both sides, about 2–3 minutes per side. Repeat with the remaining dough and filling.

Serve the Qistibi hot, cut into quarters if desired. Enjoy!
