The Making of Gluten-Free Rghaif

Crafting the Gluten-Free Rghaif is an adventure in itself. This bread is made using a blend of gluten-free flour, xanthan gum, a pinch of salt, and a gentle dusting of extra gluten-free flour that gives it its distinctive supple texture. The dough gets its lift from active dry yeast and is sweetened with a hint of sugar. An assortment of other ingredients including warm water, olive oil, apple cider vinegar, and eggs are also worked into the mix, resulting in a dough of perfect consistency.

Once the dough is prepared, it is rolled out and folded meticulously before being cooked on a hot plate. The final touch? A brushing of melted butter, giving it an irresistible sheen and enhancing its flavor.

A Bread of Many Uses

The versatility of the Gluten-Free Rghaif is a characteristic that sets it apart. You can relish it in its simplest form, fresh off the skillet, or pair it with various dips, spreads, and stews for a richer dive into flavors. Its texture and flavor make it similar to puff pastry or flaky biscuits, though its layering technique is unique, hailing from Moroccan bread traditions. Add a dollop of hummus or babaganoush, or use it as a delectable scoop for tagines. Seeking a sweet treat? Smear it with honey or jam, and you’ve got yourself a delightful dessert!

Few gluten-free substitutes match the fluffy, versatile richness of this bread. So, for both gluten-sensitive foodies or anyone looking for a culinary adventure, the Gluten-Free Rghaif is a must-try. And those who already know the exquisiteness of traditional Moroccan Rghaif will find this gluten-free variant a delightful continuation of their culinary journeys.

What You’ll Need

  • 2 cups Gluten-free flour mix
  • 1 teaspoon Xanthan gum
  • 1 teaspoon Salt
  • 2 tablespoons Sugar
  • 1 tablespoon Active dry yeast
  • 1 cup Warm water (around 110 Fahrenheit)
  • 2 tablespoons Olive oil
  • 1 tablespoon Apple cider vinegar
  • 2 large Eggs
  • Extra gluten-free flour for dusting
  • Melted butter for brushing
ALLERGENS: Eggs

Method

Step One

Begin with taking a large bowl and combine gluten-free flour, xanthan gum, salt, sugar, and active dry yeast. Mix the ingredients thoroughly until they are well combined.

Step Two

Create a well in the middle of the dry ingredients. Pour warm water, olive oil, apple cider vinegar, and eggs into the well. Use an electric mixer on a medium speed to thoroughly mix the ingredients together and form your dough. Continue mixing until you get a smooth and sticky dough consistency.

Step Three

Transfer the dough onto a well-floured surface and knead it gently with extra gluten-free flour until it is less sticky and easier to handle. Divide the dough into 8 equal pieces and let them rest for about 15 minutes.

Step Four

After the resting period, take one piece of dough and roll it out into a circular shape on a well-floured surface. Brush the top surface with melted butter and fold the dough to form a square.

Step Five

Again dust the surface and roll the square dough out into a larger square. Repeat this process twice until you have 8 square rghaif.

Step Six

Preheat your skillet over medium heat and cook each side of the rghaif for 3-5 minutes until they appear golden-brown and have puffed up slightly. Repeat this cooking process for each piece of rghaif.

Step Seven

Once lightly browned and puffed, remove from the skillet and serve them warm. Enjoy your homemade Gluten-Free Rghaif!
