What You’ll Need

  • 2 cups of gluten-free all-purpose flour
  • 1 teaspoon of xanthan gum (if not in your gluten-free flour mix already)
  • 1 teaspoon of salt
  • 1 tablespoon of sugar
  • 2 tablespoons of ghee or butter, melted
  • 3/4 cup of water
  • Additional melted ghee or butter for cooking
ALLERGENS: ghee or butter

Method

Step One

Combine the gluten-free all-purpose flour, xanthan gum, salt, and sugar in a large bowl. Make sure to evenly distribute all the ingredients.

Step Two

Melt the ghee or butter and add it to the dry mixture. Begin to mix together. Gradually add the water while continuing to mix until a dough begins to form.

Step Three

Knead the dough in the bowl for a few minutes until it becomes smooth and non-sticky. If the dough is too sticky, add a little more gluten-free flour. If it’s too dry, add a bit more water.

Step Four

Divide the dough into small balls, roughly the size of golf balls. Set them aside and let them rest for about 15 minutes.

Step Five

Heat a nonstick pan over medium heat. Roll out each dough ball into a thin circle using a rolling pin. You can also use your hands to stretch the dough if it’s easier. The thinner the dough, the flakier the roti will be.

Step Six

Brush one side of the rolled dough with a little melted ghee or butter. Place that side down onto the hot pan. Brush the top side with more ghee or butter.

Step Seven

Cook the roti for about 1-2 minutes, until the bottom side has browned. Flip the roti and cook the other side. Continue these steps with the rest of your dough balls.

Step Eight

Once each roti is cooked, place it on a serving plate and serve while warm. Enjoy your homemade Gluten-Free Roti Canai!
