What You’ll Need

  • 2 cups Gluten-free all-purpose flour
  • 1 tablespoon Xanthan gum (if it’s not already in your flour blend)
  • 1 packet (2 1/4 teaspoons) Dry active yeast
  • 1/2 cup Almond milk
  • 1/4 cup Water
  • 1/4 cup Granulated sugar
  • 1/2 teaspoon Salt
  • 4 tablespoons Unsalted butter
  • 3 large Eggs
  • 1 teaspoon Vanilla extract

Method

Step One

Start by whisking together the gluten-free flour and xanthan gum (if using) in a large bowl. Then, in a separate bowl, combine your dry active yeast with 1 tablespoon of the sugar and 1/4 cup of warm water (not too hot). Allow this to sit for about 5 minutes, or until the mixture begins to froth – this is how you’ll know your yeast is active.

Step Two

In a small saucepan, heat your almond milk, butter, the remaining sugar and salt over a medium heat, until the butter has melted. Take care not to let it get too hot, it should only be lukewarm. After this, stir in your yeast mixture.

Set your buns in a warm place to rise for about 1 hour. They should double in size.

Step Six

While your buns are rising, preheat your oven to 375°F (190°C). Once your buns have risen, bake them for about 20-25 minutes for smaller buns or 45-50 minutes for a large bun, until the top is golden brown and a toothpick inserted into the middle comes out clean.

Step Seven
