What You’ll Need
- 2 cups gluten-free all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1/2 teaspoon xanthan gum
- 1 cup almond milk
- 2 large eggs
- 1/2 cup honey
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 cup chopped dried fruits and nuts (optional)
- 2 cups white sugar
- 1/4 cup water
- 1 cup light corn syrup
Method
Step One
Begin by preheating your oven to 350 degrees Fahrenheit (175 degrees Celsius). Then, take a large baking sheet, and line it with parchment paper for easy cleanup.
Step Two
In a large mixing bowl, combine your gluten-free all-purpose flour, baking powder, sea salt, and xanthan gum. Stir until these ingredients are well combined.
Step Three
In a separate bowl, whisk together almond milk, large eggs, honey, vegetable oil, and vanilla extract. Ensure that these ingredients are well combined.
Step Four
Gradually add your liquid ingredients to the bowl with your dry ones, mixing well between each addition. Continue this process until a smooth batter forms.
Step Five
If you’ve decided to include dried fruits and nuts, fold them into your batter now.
Step Six
Pour your batter onto the prepared baking sheet. Use a spatula or the back of a spoon to spread it out evenly.
Step Seven
Bake for around 20-25 minutes, or until the Saqima is golden brown and firm to the touch. Once done, remove the Saqima from the oven and let it cool completely.
Step Eight
While the Saqima is cooling, prepare your syrup. To do this, combine white sugar, water, and light corn syrup in a small saucepan. Heat this over medium heat until the sugar has completely dissolved and the syrup has thickened.
Step Nine
Once the Saqima has cooled, cut it into small rectangular or square pieces. Then, carefully dip each piece into the syrup, ensuring each one is fully coated.
Step Ten
Finally, lay out your syrup-coated Saqima on a wire rack to dry and harden. Once dry, they’re ready to be enjoyed!
