What You’ll Need

  • 1.5 cups of gluten-free flour blend
  • 2 tablespoons of sugar
  • 2 teaspoons of gluten-free baking powder
  • 1 teaspoon of xanthan gum (if not already included in flour blend)
  • 1 teaspoon of salt
  • 1 cup of warm water (110 degrees F/45 degrees C)
  • 1 tablespoon of active dry yeast
  • 1 teaspoon of sugar
  • 2 tablespoons of olive oil
  • 1 large egg
  • 1 tablespoon of white vinegar
  • 1 tablespoon of gluten-free sesame seeds (optional)
ALLERGENS: egg

Method

Step One

In a large bowl, combine the gluten-free flour blend, 2 tablespoons of sugar, gluten-free baking powder, xanthan gum (if it’s not already included in your flour blend), and salt, then set aside.

Step Two

In a different bowl, mix the warm water and 1 teaspoon of sugar until fully dissolved. Sprinkle the active dry yeast over the water and let it sit for about 5 to 10 minutes until the yeast is frothy.

Step Three

To the yeast mixture, add the olive oil, egg, and white vinegar and stir well.

Step Four

Gradually add the dry ingredients into the wet mixture, stirring constantly until it forms a sticky dough.

Step Five

Cover the dough with a damp cloth and let it rise in a warm place for about 1 hour or until it doubles in size.

Step Six

Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius) and line a baking sheet with parchment paper.

Step Seven

With wet hands, divide the dough into 6 equal parts and shape them into round loaves. Place them onto the prepared baking sheet and press down slightly on each loaf.

Step Eight

Sprinkle the loaves with gluten-free sesame seeds if desired. Bake the loaves in the preheated oven for about 20 minutes, or until they are light brown.

Step Nine

Remove the loaves from the oven and allow them to cool slightly before serving, and it’s ready. Enjoy your Gluten-Free Taftan!
