What You’ll Need
- 1.5 cups of gluten-free bread flour
- 1 tablespoon of xanthan gum
- 2 tablespoons of sugar
- 1 teaspoon of salt
- 1.25 cups of warm water (110°F)
- 2 teaspoons of instant yeast
- 2 tablespoons of melted butter
- 2 large eggs
- 2 teaspoons of cider vinegar
- 1 egg yolk for glaze
Method
Step One
In a large bowl, combine 1.5 cups of gluten-free bread flour, 1 tablespoon of xanthan gum, 2 tablespoons of sugar, and 1 teaspoon of salt.
Step Two
In a separate bowl, mix together 1.25 cups of warm water and 2 teaspoons of instant yeast. Allow this mixture to rest for 5 minutes until it becomes frothy.
Step Three
Add the yeast mixture into the dry ingredients, followed by the 2 tablespoons of melted butter, 2 large eggs, and 2 teaspoons of cider vinegar. Stir until combined.
Step Four
Turn the dough out onto a floured surface and knead for about 15 minutes until the dough is smooth and elastic.
Step Five
Place the dough in a greased bowl, cover it with a damp cloth and let it rise for about 1-2 more hours until it approximately doubles in size.
Step Six
Preheat your oven to 375°F (190°C). Punch down the dough and divide it into 3 equal pieces.
Step Seven
Roll each piece into a long rope and braid them together. Seal the ends under the braid and place the loaf onto a baking sheet lined with parchment paper.
Step Eight
In a small bowl, beat 1 egg yolk. Brush the egg yolk over the top of the loaf to give it a shiny glaze.
Step Nine
Bake your Zopf in the preheated oven for about 25-30 minutes, or until it sounds hollow when tapped. Allow the loaf to cool on a wire rack before slicing and serving. Enjoy!
