The feta cheese, cherry tomatoes and bell peppers grace this pizza with a vivid splash of color and an abundance of taste that can be very similar to Greek-style pizzas, but with an added twist.

What You’ll Need

  • 1 large pizza dough
  • 1 cup pizza sauce
  • 2 cups mozzarella cheese, shredded
  • 1 cup Good King Henry leaves (Chenopodium bonus-henricus), chopped
  • 1 cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup mixed bell peppers, sliced
  • 1 medium red onion, thinly sliced
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh pineapples, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method

Step One

Preheat your oven to 450 degrees Fahrenheit. If you have a pizza stone, place this in the oven to heat as well.

Step Two

Stretch out your large pizza dough on a flat, floured surface to your preferred thinness. If you like a thicker crust, leave extra dough around the edges.

Step Three

Remove your pizza stone from the oven, if using, and carefully transfer your dough onto it. Alternatively, you can place your stretched dough onto a pizza peel or an upside-down baking sheet. Brush the dough with 1 tablespoon of olive oil and sprinkle with a little salt and pepper. Then, spread pizza sauce evenly over the dough, leaving a border for the crust.

Step Four

Evenly sprinkle your shredded mozzarella cheese over the sauce. Follow this with your chopped Good King Henry leaves. Then, evenly distribute the crumbled feta cheese over the leaves.

Step Five

Next, add your toppings – halved cherry tomatoes, sliced mixed bell peppers, thinly sliced red onions, and chopped fresh pineapples. Drizzle another tablespoon of olive oil on top of your pizza.

Step Six

Place the pizza in the oven and bake for about 15-20 minutes, or until the crust is golden and the cheese is bubbly and slightly browned. Watch carefully as cooking times can vary widely based on your specific oven and the thickness of your pizza crust.
