Method

Step One

Bring the mixture to a boil over medium heat. Reduce the heat once it starts boiling and let it simmer for about 15-20 minutes or until the gooseberries are soft and the liquid has reduced.

Step Three

Using a blender or food processor, puree the gooseberry mix until smooth. Strain the puree through a sieve to remove the seeds and skin, then stir in the lemon juice and vanilla extract.

Step Four

While the puree is cooling in the refrigerator, whip the heavy cream in a seperate bowl until it forms soft peaks. Gradually add the confectioners’ sugar while continuing to whip the cream until it forms stiff peaks.

Step Five
