What You’ll Need
- 1 1/2 cups of fresh Gooseberries
- 1 cup of granulated Sugar
- 1 tablespoon of Cornstarch
- 1/4 teaspoon of Salt
- 1 tablespoon of Butter
- 1/2 teaspoon of grated Lemon Zest
- 1 tablespoon of Lemon Juice
- 2 large Eggs
- 1 unbaked Pie Shell (9 inch)
- 1 cup of fresh Whipped Cream (for topping)
Method
Step One
Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Meanwhile, sort your gooseberries, removing stems and any spoiled berries. Rinse the gooseberries thoroughly under cold water.
Step Two
Place the cleaned gooseberries into the pie shell. Make sure they are distributed evenly.
Step Three
In a medium bowl, combine the granulated sugar, cornstarch, and salt. Stir until these ingredients are well incorporated.
Step Four
In another bowl, whisk the eggs until they become light and foamy. Next, stir in the butter, lemon zest, and lemon juice. Continue to mix until these ingredients are thoroughly blended.
