I’ve always been a big fruit fan, but I’d never really given much thought to cooking with them, beyond adding them to my cakes. This Grapefruit Brulee has a similar wonder about it, and the way the caramelization enhances its natural flavors…I decided then and there to make more of these fantastically fruity desserts.

What You’ll Need

  • 6 large grapefruits
  • 1 cup of white granulated sugar
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 2 tablespoons of unsalted butter, melted
  • 6 sprigs of fresh mint for garnish

Method

Step One

Start by halving the grapefruits. Use a knife to loosen the grapefruit segments gently from the outer skin and set them aside.

Step Two

In a separate bowl, combine the white granulated sugar, ground cinnamon, and ground nutmeg. Mix these ingredients until well combined.

Step Three

Preheat your broiler to high heat and position a rack about 4 inches from the heat source.

Step Four

Brush the cut surfaces of the grapefruit halves with the melted, unsalted butter.

Step Five

Sprinkle the sugar mixture evenly over the buttered grapefruit halves.

Step Six

Arrange the grapefruit halves in a department baking dish or on a rimmed baking sheet. Broil them until the sugar is melted and caramelized. This usually takes 3 to 5 minutes and please make sure to keep a watch on it to prevent burning.

Step Seven

Remove the caramelized grapefruit halves from the oven and top each one with a sprig of fresh mint. Allow to cool slightly before serving, as the sugar topping will be very hot.
