Every spoonful of Greater Plantains with Beef and Vegetables is like an exciting journey around the world of flavors. The sweetness of the ripe plantains, the robust flavors of the beef, and the freshness of the vegetables – everything comes together to create a meal that’s both satisfyingly filling and astonishingly flavorful. A pinch of paprika elevates the dish to new heights while the exquisite aroma of garlic laces the meal with an appetizing allure most can’t resist.
Nutrition and Health benefits
What I truly appreciate about this recipe, besides its astonishing flavor, is its plethora of health benefits. Plantains, a staple in many tropical regions, are a rich source of vitamins, especially A, C, and B6. They’re also high in fiber, which aids digestion. The beef provides a good dose of protein, essential for muscle growth and recovery. Coupled with the nutrients and minerals from the vegetables, you have a dish that’s not just tasty but nutrient-rich. Here’s a helpful resource that explains more about the health benefits of plantains.

What You’ll Need
- 6 ripe plantains
- 2 lbs of beef
- 2 large carrots, peeled and sliced
- 2 bell peppers, diced
- 1 large onion, chopped
- 4 cloves of garlic, minced
- 1 cup of peas
- 1 cup of sweet corn
- 3 tablespoons of vegetable oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of paprika
- 2 cups of beef broth
Method
Step One
Begin by prepping your ingredients. Peel and slice your ripe plantains and set them aside. Then, peel your carrots and cut them into slices. Next, dice your sweet bell peppers and chop your large onion. Set these ingredients aside for later use.
Step Two
Add the vegetable oil into a large pan and heat over medium-high heat. Once the oil is hot, add your beef into the pan and season with salt, black pepper, and paprika. Cook the meat until it is well-browned.
Step Three
After your meat is browned, add the chopped garlic, onion, and bell peppers into the pan. Mix well with the meat.
Step Four
When the vegetables are slightly tender, add the sliced carrots, peas, and sweet corn into the pan. Mix well with the rest of the ingredients.
Step Five
Next, pour in your beef broth and bring everything to a slight boil. Reduce your heat to low and let it simmer for about 20 – 25 minutes, until your vegetables are completely tender.
Step Six
Meanwhile, in a different pan, add a small amount of oil and fry your sliced plantains on each side until they are a lovely golden-brown color.
Step Seven
Add the fried plantains to the simmering beef and vegetable mixture. Let everything cook together for a further 5 – 7 minutes.
Step Eight
Taste your dish and adjust the seasoning if necessary. Plate your Greater Plantains with Beef and Vegetables and serve while hot. Enjoy your meal!
