What You’ll Need

  • 6 cups vegetable broth
  • 1 cup of green laver (sea lettuce), soaked in water
  • 2 cups of diced zucchini
  • 1 cup of diced red bell pepper
  • 1 cup of sweet corn kernels
  • 1 white onion, finely chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to spice
  • Chopped fresh parsley, for garnish
  • Lemon wedges, for serving

Method

Step One

Begin by soaking the green laver (sea lettuce) in water. Set it aside to absorb the water.

Step Two

Heat up the olive oil in a large soup pot. Once it’s hot, add the finely chopped white onion to the pot and sauté until it becomes translucent.

Step Three

Add in the minced garlic and continue sautéing for a couple of minutes until the garlic is cooked and the aroma fills the kitchen.

Step Four

Then add, the diced zucchini and red bell pepper to the soup pot. Sauté them until they become tender.

Step Five

Now, drain the soaked green laver and add it to the pot. Mix thoroughly with the other ingredients and let it cook for a couple of minutes.

Step Six

Afterward, pour the vegetable broth into the soup pot. Stir the mixture until all ingredients are well combined. Allow the soup to simmer for about 15-20 minutes.

Step Seven

Add the sweet corn kernels into the soup pot. Season the soup with salt and pepper according to your taste preference. Let the soup simmer for another 5 minutes.

Step Eight

Once all the ingredients have been thoroughly cooked and the flavors have merged, remove the soup pot from the heat.

Step Nine

Serve the Green Laver Soup hot, garnished with fresh chopped parsley. A wedge of lemon can be served on the side to be squeezed into the soup if desired.
