What You’ll Need

  • 2 tablespoons olive oil
  • 1 large yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon crushed red pepper flakes
  • 1 large cauliflower head, cut into florets
  • 1 cup vegetable broth
  • 1 can (14 ounces) coconut milk
  • 2 cups fresh or frozen green peas
  • 1 cup cashews, roasted
  • 1/4 cup fresh cilantro, chopped

Method

Step One

In a large pot or dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent, this should take about 5-7 minutes.

Step Two

Add the minced garlic and grated ginger to the pot and continue to cook for another minute, until they become fragrant.

Step Three

Now add the curry powder, turmeric, cumin, salt, black pepper, and red pepper flakes to the pot. Stir everything together, allowing the spices to toast slightly and coat the onions, garlic, and ginger.

Step Four

Next, add the cauliflower florets to the pot and stir well, ensuring that each floret is coated in the spice mixture.

Step Five

Pour in the vegetable broth and coconut milk. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and allow everything to simmer for around 15-20 minutes, or until the cauliflower is tender.

Step Six

Once the cauliflower is cooked, add the green peas and roasted cashews to the pot. Let it continue to simmer for another 5 minutes, or until the peas are heated through.

Step Seven

Remove the pot from the heat, and stir in the chopped cilantro. Your Green Pea and Cauliflower Curry with Cashews and Cilantro is ready to serve. Enjoy it over cooked rice for a satisfying and healthy meal.
