I have always been smitten with the ocean’s bounty, Maine’s culinary offerings, and the rich flavors of my seaside home. But sometimes, my palate craves something a bit unexpected. Such is the case with the delightful Green Pepper Chicken Stir Fry, an island of flavors, marked by its bounty of fruits and veggie goodness nestled within, punctuating spice and sweetness amidst hearty chicken.
Recipe Highlights
The allure of this recipe does not simply rest on taste alone. With its generous offerings of greens and a chockful of protein from chicken, this stir-fry fosters a cornucopia of health benefits. Green peppers, for instance, are a rich source of Vitamin C and antioxidants, promoting skin health and boosting your immune system. Onions bring to the table, or rather, the wok, their unique blend of vitamins, minerals, fiber, and potent plant compounds. Pineapple chunks are deliciously vivid reminders of the needed Vitamin C and manganese in our diet.
Whilst deep-sea dwellers have cemented their place in my kitchen, chicken rarely misses a chance to bob up, mainly because it’s such a universal crowd-pleaser. The chicken breast in this recipe provides a lean protein source, keeping you satisfied without a significant amount of fat or calories. It’s a great recipe that balances rich flavor with health benefits, which becomes a real joy for a mom like me with two darlings to care for at home.

The Green Pepper Chicken Stir Fry is a veritable chameleon in the world of cuisines. Its innate versatility allows it to be paired seamlessly with a variety of dishes. It serves as a unique complement to a straight-out-of-the-oven noodles dish or a heart-healthy lentil curry. If you’re in the mood for some extra crunch, why not pair it with a fresh, vibrant Asian Ramen Noodle Salad
So whether you’re yearning for a taste of the tropics, seeking a healthy dinner alternative, or just craving a mouthwatering culinary diversion, Green Pepper Chicken Stir Fry will deliver and then some. Trust me!
What You’ll Need
- 2 pounds chicken breast, cut into 1-inch pieces
- 3 medium green peppers, sliced
- 1 large onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon sesame oil
- 1/4 cup soy sauce
- 2 tablespoons cornstarch
- 1/2 teaspoon black pepper
- 1 tablespoon white sugar
- 1/2 cup chicken broth
- 1 can (8 ounces) pineapple chunks, drained
- 2 tablespoons vegetable oil
Method
Step One
Begin by preparing your chicken. Cut the chicken breast into 1-inch pieces. Set aside.
Step Two
Slice the green peppers and onion. Mince the garlic. Drain the pineapple chunks.
Step Three
Heat the sesame oil in a large frying pan or wok over medium to high heat. When the oil is heated, add the cut chicken. Stir fry until the chicken turns white and is cooked through. This should take around 5 – 7 minutes. Remove the chicken from the pan and set it aside.
Step Four
In the same pan, heat the vegetable oil over medium to high heat. Add the sliced green peppers and onions. Stir fry until they start to become tender. Then add the minced garlic and stir fry for another minute.
Step Five
To prepare the sauce, in a small bowl, combine the soy sauce, cornstarch, black pepper, white sugar, and chicken broth and mix until all the ingredients are fully integrated and the Cornstarch and white sugar are completely dissolved.
Step Six
Pour the prepared sauce into the pan with vegetables. Add the cooked chicken back into the pan. Add the drained pineapple chunks. Stir well to combine and allow everything to simmer on low heat until the sauce has thickened. This should take about 3 – 5 minutes.
Step Seven
Your Green Pepper Chicken Stir Fry is now ready to be served. Enjoy it hot directly from the pan or with a side of steamed rice for an extra filling meal.
