What You’ll Need

  • 3 large bell peppers (one red, one yellow, one green)
  • 1/4 cup olive oil
  • 3 cloves of garlic, minced
  • 1 tsp fresh rosemary, finely chopped
  • 1 tsp fresh thyme, finely chopped
  • 1 tsp fresh basil, finely chopped
  • Salt to taste
  • Pepper to taste

Method

Step One

Preheat your grill on medium-high heat. While your grill is preheating, you can cut the bell peppers. Remove the tops, seeds, and membranes of each bell pepper. Cut each pepper into two halves. Set them aside.

Step Two

In a small saucepan, add the olive oil and minced garlic. Place the saucepan on a stove over medium heat and sauté the garlic until it’s fragrant.

Step Three

Remove the saucepan from the heat and mix in the finely chopped herbs: rosemary, thyme, and basil. Stir until the herbs are evenly incorporated into the garlic oil. Season with salt and pepper to your liking.
