What You’ll Need
- 6 boneless chicken thighs
- 1/2 cup of freshly squeezed lemon juice
- 3 cloves garlic, minced
- 1 tablespoon of chopped fresh Artemisia herb
- 2 tablespoons of honey
- 1 teaspoon of salt
- 1/2 teaspoon of fresh ground black pepper
- For garnish – extra sprigs of Artemisia herb
- Sides – grilled vegetables or salad as desired

Method
Step One
Take the 6 boneless chicken thighs and wash them well. Pat them dry and keep aside.
Step Two
Prepare the marinade. In a medium-sized bowl, mix together the 2 tablespoons of olive oil, 1/2 cup of fresh lemon juice, 3 cloves of minced garlic, 1 tablespoon of freshly chopped Artemisia herb, 2 tablespoons of honey, 1 teaspoon of salt and 1/2 teaspoon of freshly ground black pepper. Stir well until all ingredients are combined.
Step Three
Add the chicken to the marinade. Make sure that all sides of the chicken thighs are well coated with the marinade. Let the chicken marinate for at least 30 minutes, or up to 24 hours in the refrigerator for maximum flavor.
Step Four
Preheat your grill to medium-high heat. Once hot, add the chicken thighs to the grill. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165 degrees Fahrenheit.
Step Five
Once the chicken is thoroughly cooked, remove it from the grill and let it rest for a few minutes. This will help the juices to redistribute throughout the chicken, making it more flavorful and juicy.
