Take a walk on the wild side of flavors with me, Eva, as we explore the vibrant mix of a personal favorite: Grilled Chicken with Huckleberry Sauce. Straight from the heart of my kitchen in sunny Miami, I’ve drawn inspiration from my rich Cuban and Spanish heritage while prioritizing the health benefits intrinsic to this delicious dish.
Unveiling a Family Classic
The Grilled Chicken with Huckleberry Sauce might appear as a simple grilled chicken recipe, but upon your first taste, you’ll discover an unraveled depth of flavors. The huckleberry sauce is a nod towards my Cuban roots where fruit based sauces are a common delight alongside our traditional dishes. This extraordinary twist to a simple grilled chicken recipe brings an intrigue to the palate reminiscent of the culinary diversity I experienced growing up in a home proud of its Hispanic origins.
Packed with Nutrition and Flavor
But this recipe goes beyond tantalizing your taste buds – it carries formidable health benefits. Huckleberries are packed with Vitamin C and antioxidants which are essential for boosting immunity and promoting skin health. The use of olive oil contributes healthy fats which are good for heart health, and the lean chicken breasts offer a superb source of low-fat protein. It’s a dish that marries taste and health in one delightful main course.
This recipe, in its heart, is similar to the quintessential Spanish Pollo con Salsa (Chicken with Sauce), and would pair perfectly with a risotto or a light salad. Not to forget, washing it down with a glass of robust Spanish wine is sure to transport you straight to the streets of Andalusia.
Every bite of this creation is a step into a world where tradition meets innovation; and tropical flavors flirt with classic European zest. Give it a try. I’m sure this Grilled Chicken with Huckleberry Sauce will seal its spot as a favorite in your heart as well.
What You’ll Need
- 6 boneless, skinless chicken breasts
- Salt and ground black pepper to taste
- 2 tablespoons olive oil
- 1 cup fresh huckleberries
- 1/2 cup granulated sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
- 1 tablespoon cold water
- 1 tablespoon fresh rosemary, chopped
Method
Step One
First, season the chicken breasts on both sides with salt and pepper. Preheat your grill on medium-high heat.
Step Two
Drizzle the chicken breasts with olive oil and place them on the grill. Cook for about 6-7 minutes on each side or until the chicken is fully cooked and the juices run clear. Once done, remove the chicken from the grill and let it rest.
Step Three
While the chicken is grilling, start making the huckleberry sauce. In a saucepan, combine the huckleberries, granulated sugar, water, and lemon juice. Bring this mixture to a simmer over medium heat. Allow it to cook for about 10 minutes or until the berries start to burst and the sauce begins to thicken slightly.
Step Four
In a small bowl, combine the cornstarch and cold water. Stir until the cornstarch is completely dissolved. Slowly pour this mixture into the simmering huckleberry sauce, stirring continuously.
Step Five
Continue to cook the sauce for another 2-3 minutes or until it has thickened to your desired consistency. Remove the sauce from heat and stir in the chopped rosemary.
Step Six
Pour the huckleberry sauce over the rested chicken breasts. Serve immediately and enjoy your Grilled Chicken with Huckleberry Sauce!
