Every once in a while, a dish comes along that reignites my love for cooking, that reminds me why I began this culinary journey in the first place. Today, that dish is Grilled Fava Beans with Parmesan and Olive Oil. It’s hearty yet light, complex yet straightforward — a paradox that I find utterly captivating. It’s a marriage of rustic charm and refined finesse, a nod to my Pacific Northwest roots with a complimentary bow to my Japanese heritage.

A Symphony of Flavor

The fava beans, that star of this vegetable ensemble, are a mainstay in both Mediterranean and Asian cuisine. They bring a subtlety to this dish that balances out the rich, savory undertones of the Parmesan cheese. But what makes this recipe truly shine is the olive oil: its smoothness binds all the elements together, creating a tapestry of flavors that is both cohesive and distinct.

Health and Heritage on a Plate

Fava beans are packed with dietary fiber, protein, and B-vitamins, contributing to heart health and aiding in the body’s energy production. Paired with olive oil, a champion of mono-unsaturated fats, and Parmesan, a source of essential minerals, this dish is a veritable fortress of nutrients.

Grilled Fava Beans with Parmesan and Olive Oil reminds me of the grilled vegetables my father used to prepare during our family barbecues in Seattle. It’s also reminiscent of a Japanese edamame dish I fell in love with during my time in Japan. I’d recommend this as a side dish paired with seared fish or roasted poultry, or even as a meal on its own with a good glass of dry white wine.

In every bite, this dish is as much a celebration of my dual heritage as it is a testament to the power of simple, quality ingredients. It’s in recipes like this where, I find, cooking transcends from merely preparing food, to sharing a part of oneself. And that, dear readers, is why I unabashedly love this recipe and why I’m confident that you will, too.

What You’ll Need

  • 2 pounds fresh fava beans, in shells
  • 3 tablespoons extra virgin olive oil
  • 1/2 cup shaved Parmesan cheese
  • Salt, to taste
  • Pepper, to taste
  • 1 tablespoon fresh lemon juice
  • Zest of 1 lemon
  • 1/4 cup fresh basil leaves, chopped
ALLERGENS: Fava beans, olive oil, Parmesan cheese

Method

Step One

Start off by preheating your grill on medium-high heat. While it is heating up, rinse the fava beans under cold water to clean them.

Step Two

Place the fava beans in a large mixing bowl. Drizzle with two tablespoons of olive oil and season with salt and pepper, then toss lightly to coat the beans evenly.

Step Three

Once the grill is heated, arrange the fava beans on the grill. Let them grill for about 5-7 minutes on each side or until they have slightly charred and the beans inside are tender.

Step Four

After the beans have grilled, transfer them back into the large bowl. Add the remaining tablespoon of olive oil, the lemon juice, lemon zest, and half of the Parmesan cheese. Toss well to combine.

Step Five

Transfer the grilled fava beans to a serving platter. Sprinkle the remaining Parmesan cheese and fresh basil over the top of the beans. Serve immediately while hot and enjoy your grilled fava beans with Parmesan and olive oil.
