What You’ll Need
- 2 pounds of fresh fava beans in the pod
- 2 tablespoons of extra-virgin olive oil
- 1 tablespoon of coarse sea salt
- 1 lemon, zested and juiced
- 1 handful of fresh mint leaves, finely chopped
- 1 handful of fresh parsley leaves, finely chopped
- 6 slices of crusty bread, grilled
Method
Step One
Begin by preparing your grill, getting it heated to a medium-high temperature.
Step Two
As your grill is heating, shell the fava beans. Discard the pods.
Step Three
Place the shelled fava beans in a bowl and add two tablespoons of extra-virgin olive oil. Mix well, ensuring all the beans are coated in the oil.

Spread the oil coated fava beans on the hot grill. Grill them for about 5-7 minutes, turning them occasionally, until they are blistered and tender.
Step Five
Once the fava beans are grilled to your liking, transfer them back to the bowl. Season the beans with sea salt.
