What You’ll Need
- 6 filets of white fish (such as tilapia or halibut)
- 1/2 cup of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of chopped fresh mango
- 1/2 cup of chopped fresh pineapple
- 1/4 cup of finely chopped red onion
- 1/4 cup of finely chopped red bell pepper
- 1 Jalapeno, seeded and finely chopped
- 1/3 cup of shredded unsweetened coconut
- 1/4 cup of chopped fresh cilantro
- 2 tablespoons of lime juice
- 1 tablespoon of honey
- 1/2 teaspoon of curry powder
- Lime wedges and cilantro leaves for garnish
Method
Step One
First, preheat your grill to medium-high heat. In the meantime, take your fish filets and drizzle them with 1/2 cup of olive oil. Then season the filets with 1/2 teaspoon of salt and a 1/4 teaspoon of black pepper.
Step Two
