Why I Love Czech Grilled Fish with Mango Salsa

I adore this Grilled Fish with Mango Salsa recipe for its delicate balance of flavors, the oceanic tender white fish married with the sweet, tropical taste of mango salsa. This particular dish, albeit being situated in the heart of Central Europe, takes me on a tasteful journey to the coastal areas, where the warm breeze is kissing my face, and the fusion of varied flavors is melting in my mouth.

The Complex Simplicity

No, it’s not a paradox, it’s the humble, yet fantastic, Grilled Fish with Mango Salsa recipe. While the ingredient list is quite straightforward, the magic truly lies in the inclusion and synergic action of each component. Every ingredient, as simple as it may be, contributes to an incredibly complex flavor profile. The freshness of the lime, the heat from the jalapeno, and the natural sweetness of the mangoes – All working in perfect harmony to create an extraordinary culinary experience. This recipe presents itself as a fascinating reminder of Auguste Escoffier‘s famous words, “Good food is the foundation of genuine happiness.”

Mountain Meets Sea

Although I primarily specialize in game meats and mountain trout, the grilled white fish is a fantastic journey into the world of seafood. It’s a reminder that there’s a myriad of culinary possibilities waiting to be explored. This Grilled Fish with Mango Salsa is a refreshing detour from my usual mountain-based recipes. And while fish is rarely if ever, caught in the Rockies, makes me relish the taste of nature in a whole new way. If you’ve ever enjoyed a hearty trout dish, you’re bound to find this equally satisfying, if not more.

On the other hand, the Mango Salsa adds a tropical, summer touch to the dish, making it absolutely perfect for those laid-back grilling sessions in the backyard. My partner, Gordon, has always been fond of the fruity kick that mango brings to the dish, and the explosion of flavors brought about by the fusion of other ingredients. It’s a great companion to the grilled fish, mirroring its freshness, while also counteracting its subtle sea flavor.

A Versatile Delight

As a stand-alone dish, The Grilled Fish with Mango Salsa shines, but in good company, it absolutely glows. This recipe pairs beautifully with a light, crisp white wine, particularly a Sauvignon Blanc or a Pinot Grigio. It’s also an ideal dance partner to dishes like fresh salads, roasted vegetables, and even creamy pasta. So, the next time you’re planning a festive, leisurely dinner or a vibrant summer barbecue, remember to let this Central European gem take center stage. (Food & Wine)

What You’ll Need

  • 6 white fish fillets (approximately 4 ounces each)
  • 3 tablespoons of olive oil
  • Salt, to taste
  • Black Pepper, to taste
  • 2 mangoes, peeled and diced
  • 1 small red onion, finely chopped
  • 1 jalapeno, seeds removed and finely chopped
  • 1 bunch of fresh cilantro, finely chopped
  • Zest and juice of 2 fresh limes
  • 1 tablespoon of honey
  • 2 finely chopped garlic cloves
ALLERGENS: Fish

Method

Step One

Season your fish fillets on both sides with salt and pepper. Then drizzle the fillets with 2 tablespoons of the olive oil. Set them aside for later.

Step Two

Prepare the mango salsa. In a medium mixing bowl, combine the diced mango, finely chopped red onion, finely chopped jalapeno, finely chopped garlic cloves, and the finely chopped cilantro.

Step Three

In a small bowl, whisk together the remaining olive oil, lime zest, lime juice, and honey. Pour this dressing over the mango salsa, and stir until everything is well combined. Season the salsa to taste with additional salt and pepper, and set it aside while you cook the fish.

Step Four

Preheat your grill to medium-high heat. Once the grill is hot, place the seasoned fish fillets on the grill, and cook them for about 4 to 5 minutes on each side, or until they’re opaque and flake easily with a fork.

Step Five

Once the fish is done, remove it from the grill, and let it rest for a few minutes. Then, serve the grilled fish fillets with a generous spoonful of the mango salsa on top. Enjoy your Grilled Fish with Mango Salsa.
