What You’ll Need

  • For the Marinade:
    • 1/4 cup of fresh lime juice.
    • 2 tablespoons of brown sugar.
    • 2 tablespoons of soy sauce.
    • 1 teaspoon of minced garlic.
    • 1 teaspoon of freshly grounded black pepper.
  • For the Slaw:
    • 4 cups of thinly shredded cabbage.
    • 2 tablespoons of mayonnaise.
    • 1 tablespoon of honey.
    • 1 tablespoon of chipotle in adobo sauce.
    • 1 tablespoon of fresh lime juice.
    • 1/2 teaspoon of salt.
  • For the Tacos:
    • 6 pieces of fresh halibut.
    • 12 flour tortillas.
    • 1 ripe avocado, cut into thin slices.
    • 1/4 cup of fresh chopped cilantro.
    • Fresh lime wedges to serve.

Method

Step One

To make the marinade, combine 1/4 cup of fresh lime juice, 2 tablespoons of brown sugar, 2 tablespoons of soy sauce, 1 teaspoon of minced garlic, and 1 teaspoon of freshly grounded black pepper in a bowl. Stir the ingredients until they are well mixed.

Step Two

Place the halibut in the marinade and turn to coat it completely. Cover and refrigerate for at least 30 minutes or up to 4 hours, turning occasionally.

Step Three

While the halibut is marinating, prepare the slaw. In a large bowl, combine 4 cups of thinly shredded cabbage, 2 tablespoons of mayonnaise, 1 tablespoon of honey, 1 tablespoon of chipotle in adobo sauce, 1 tablespoon of fresh lime juice, and 1/2 teaspoon of salt. Toss until all the cabbage is coated and set aside.

Step Four

Preheat your grill to medium heat. Remove the halibut from the marinade, discarding any remaining marinade. Place the fish on the grill and cook for approximately 4-5 minutes on each side or until the fish is opaque and flaky.

Step Five

To assemble the tacos, warm the flour tortillas on the grill for about 15 seconds on each side. Remove and keep warm. Place a piece of grilled halibut on each tortilla, then top with a generous helping of the chipotle-lime slaw.

Step Six

Top each taco with a few avocado slices and a sprinkle of fresh chopped cilantro. Serve the halibut tacos immediately with fresh lime wedges on the side.
