What You’ll Need
- 6 whole live lobsters, about 1 1/2 pounds each
- Extra virgin olive oil, for brushing
- Salt and freshly ground black pepper
- 2 cups unsalted butter, softened
- 1/4 cup fresh lemon juice
- 4 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh basil, chopped
- 2 tablespoons fresh tarragon, chopped
- 2 tablespoons fresh chives, chopped
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
For Herb Butter:
Method
Step One
To make the herb butter, combine 2 cups of softened unsalted butter, 1/4 cup fresh lemon juice, 4 minced cloves of garlic, 1/4 cup chopped fresh parsley, 1/4 cup chopped fresh basil, 2 tablespoons of chopped fresh tarragon, 2 tablespoons of chopped fresh chives, 1 teaspoon of sea salt, and 1/2 teaspoon of freshly ground black pepper in a bowl. Mix until well incorporated. Set aside.
Step Two
Prepare the lobsters by rinsing them under cold water. Then, using a sharp knife, split the lobsters in half lengthwise. Be sure to keep the tail and head intact.
Step Three
Brush the cut side of the lobsters with extra virgin olive oil and season with salt and freshly ground black pepper.
Step Four
Preheat your grill to medium heat. Place the lobsters cut side down on the grill. Grill for about 5-7 minutes, until the shells are bright red.
Step Five
Turn the lobsters over and spoon a generous amount of the herb butter onto the cut side of each lobster. Continue to grill for another 4-5 minutes, until the lobster meat is opaque and cooked through.
