There’s something gratifyingly warm and comforting about whipping up a batch of Grilled Maize with Peppers and Chorizo. The flavors capture the heartiness tradition of mountain fare – rustic yet complex, robust yet pleasantly unfussy. As the sweet scent of charred maize mingles with the robust smokiness of chorizo, you can almost imagine yourself dining al fresco in beautiful Colorado. This unpretentious dish sort of embodies me and my culinary journey – a testament to my Rocky Mountain influence and my adoration for wholesome, satisfying fare.
Embracing Heartiness with Health
The Grilled Maize with Peppers and Chorizo is anything but detached from health. This dish brings together nutrient-packed ingredients like maize, bell peppers, and onion. Not only do these ingredients contribute to the delightful combination of flavors and textures, but they’re also loaded with essential vitamins, including vitamin C and fiber which can aid in digestion and boost immunity.
A Fiery Combo
To incorporate some of that outdoor, gamey flavor I adore, I’ve included fresh chorizo sausage. Sure, it adds a kick of heat and a touch of rich, smokey flavor to the dish, but it also offers a unique touch that’s reflective of my love for game meats. But worry not, the heat is well balanced with the freshness of the lime, cilantro, and the sweet kernels of corn which makes this dish oh so loved.
If I were asked to compare Grilled Maize with Peppers and Chorizo to another dish, I’d immediately think of the traditional Paella Mixta – the shared emphasis on hearty ingredients, bright flavors, the play of textures, and a little heat. They’re both crowd-pleasers, promising to warm you head to toe on a chilly night.
Grilled Maize with Peppers and Chorizo makes an excellent standalone dish, offering a part protein, part vegetable balance. But it also works well served alongside other dishes, especially if you’re making a larger spread. A refreshing Shrimp Cocktail could provide a welcome contrast to the heat, while a zesty, crisp Caesar Salad would offer a complementary lightness.
Whether it’s a casual family dinner or a gathering around the fire pit, this Grilled Maize with Peppers and Chorizo recipe will bring a dash of mountain warmth to any occasion. Bon appétit!
What You’ll Need
- 6 ears of fresh maize (corn)
- 1/4 cup of extra-virgin olive oil
- Salt and freshly ground black pepper
- 2 medium-sized red bell peppers
- 2 medium-sized green bell peppers
- 1 pound of fresh chorizo sausage
- 1 tablespoon of smoked paprika
- 1 large finely chopped onion
- 2 gloves of minced garlic
- 1 cup of finely chopped fresh cilantro
- 1 lime, cut into wedges
Method
Step One
To begin with, preheat your grill to medium heat. While it’s warming up, peel the husks off your six ears of maize (corn).
Step Two
Brush the olive oil evenly over the ears of maize, applying a liberal amount. Season each with salt and freshly ground black pepper to your taste.
Step Three
Place the maize and both the medium-sized red and green bell peppers onto the grill. Cook for about 15 minutes, turning every few minutes to ensure even roasting. The maize should be lightly charred and the peppers should be blistering and softened.
Step Four
While the vegetables are grilling, cook the chorizo sausage in a pan over medium heat. Ensure to break up the sausage into crumbly bits.
Step Five
Once the maize and peppers are roasted, remove them, and let them cool enough to handle. After that, cut the kernels off the maize ears and chop the bell peppers into small pieces.
Step Six
Add the chopped onion and minced garlic to the pan with the chorizo, stirring regularly. Cook until the onions are translucent and garlic is fragrant.
Step Seven
Now it’s time to combine everything. Add the grilled maize kernels and chopped bell peppers to the chorizo mixture. Sprinkle in the smoked paprika.
Step Eight
Stir in the finely chopped cilantro last to maintain its freshness, ensuring everything is well mixed.
Step Nine
Serve piping hot with lime wedges on the side, encouraging guests to squeeze fresh lime juice over their servings for a touch of zesty brightness. Enjoy your Grilled Maize with Peppers and Chorizo!
