I’ve long been a lover of the bright, bold Tex-Mex flavors I grew up with in Texas, but there’s a special place in my heart for the fresh, light, and incredibly flavorful Grilled Maui Onion Salad. This vibrant salad brings together a delightful blend of ingredients, ensuring every bite is a flavor explosion that retains the essence of a hearty, home-style meal.

I first fell in love with this recipe when I was exploring healthier lifestyle changes without compromising on taste.

Colorful Ingredients, Vibrant Flavors

Imagine biting into a piece of succulent grilled Maui onion, its subtle sweetness adding depth to the crisp freshness of arugula and spinach. Now, add to this melange, the juicy bursts from cherry tomatoes and mango chunks contrasted by the tangy feta cheese. Best of all? The satisfying crunch of walnuts to complete the spectrum of textures. It’s not just a salad, it’s a symphony on a plate!

Grilled Maui Onion Salad

However, it’s not just about the flavors. The Grilled Maui Onion Salad is a health lover’s dream. The spinach offers rich iron content, while the arugula serves an abundance of vitamin K. Also, let’s not forget the high antioxidant quotient of strawberries and the “good fats” of extra virgin olive oil.

Health benefits and Pairings

Extra Virgin Olive Oil‘s monounsaturated fats are known to promote heart health. Meanwhile, walnuts can improve brain health and inflammation. The Grilled Maui Onion Salad isn’t just for your palate, it’s for your health too!

The Grilled Maui Onion Salad can easily be the star of any gourmet meal, but it shines when coupled with a hearty roasted chicken, a grilled fish, or a simple baked tofu for vegetarians. If you’re up for a full-course dinner, this salad would be a perfect start to a hearty Texas-style Barbecue.

Whether it’s a casual weekday meal or a dinner party with friends, the Grilled Maui Onion Salad promises a culinary adventure that’s hard to forget. It’s not just a salad; it’s a taste and health revolution in a bowl. I hope you’ll love it as much as I do!

What You’ll Need

  • 2 Large Maui Onions
  • 3 tablespoons Extra Virgin Olive Oil
  • Salt to taste
  • Pepper to taste
  • 3 cups fresh Arugula
  • 2 cups fresh Spinach
  • 1 cup Cherry Tomatoes
  • 1 cup sliced Strawberries
  • 1/2 cup Walnuts
  • 1/2 cup Feta Cheese
  • 1 cup Mango Chunks
  • For the dressing:
  • 1/4 cup Red Wine Vinegar
  • 1 tablespoon Dijon Mustard
  • 1 tablespoon Honey
  • 1/2 cup Extra Virgin Olive Oil
  • Salt to taste
  • Pepper to taste
ALLERGENS: Walnuts, Feta Cheese, Dijon Mustard

Method

Step One

Start by preheating your grill to medium-high heat. While waiting for the grill to heat, slice your Maui Onions into rounds of about 1/2 inch thick. Brush both sides of the onion slices with olive oil, and season with salt and pepper.

Step Two

Place the onion slices on your preheated grill, grilling each side for 4-5 minutes until they’re well charred and softened. Once cooked, remove the onions from the grill and set them aside to cool.

Step Three

Prepare your salad bowl. Combine your fresh arugula and spinach in a large salad bowl, then add your cherry tomatoes, sliced strawberries, walnuts, feta cheese, and mango chunks. Mix everything together gently.

Step Four

By now, your grilled onions should be cool enough to handle. Separate the onion rounds into individual rings and add them to your salad.

Step Five

Next, you’ll make the dressing. In a small bowl, whisk together your red wine vinegar, Dijon mustard, and honey. Slowly drizzle in the olive oil while continuously whisking, until your dressing thickens. Season with salt and pepper to taste.

Step Six

Drizzle your homemade dressing over the salad and toss everything together until everything is well coated. Serve your Grilled Maui Onion Salad immediately and enjoy!
