What You’ll Need

  • 1 tablespoon of active dry yeast
  • 1 cup of warm water (110°F)
  • 1 teaspoon of sugar
  • 3 cups of bread flour
  • 1 teaspoon of salt
  • 2 tablespoons of olive oil
  • 2 tablespoons of njangsa seed powder
  • 2 sweet apples, thinly sliced
  • 1 cup of red grapes, halved
  • 1/2 cup of blueberries
  • 1/4 cup of honey
  • 1 tablespoon of fresh mint chopped
  • Extra olive oil for brushing
ALLERGENS: yeast, wheat, gluten

Method

Step One

Dissolve the active dry yeast and sugar in the warm water. Allow the mixture to sit for about 5 to 10 minutes until it becomes frothy. This indicates that the yeast is active and ready for use.

Step Two

In a large mixing bowl, combine the bread flour, salt, and njangsa seed powder. Mix these dry ingredients until they’re well combined.

Step Three

Pour the yeast mixture and olive oil into the bowl of dry ingredients. Mix until you have a sticky dough. Knead the dough on a floured surface for about 10 minutes, or until the dough is smooth and elastic. Add more flour if the dough is too sticky or add some water if it’s too dry.

Step Four

Put the dough into a clean, greased bowl and cover it with a damp cloth. Let it rise in a warm place for about 1 hour or until it has doubled in size.

Step Five

Preheat a grill to medium heat. Punch down the dough, then divide it into 6 equal parts. Roll out each part into a flat round, about 1/4 inch thick. Brush each flatbread with some olive oil and grill for about 2-3 minutes on each side or until the desired level of char is achieved and the flatbread is cooked through.

Step Six

In a bowl, combine the sliced apples, halved grapes, and blueberries. Drizzle with honey and sprinkle with chopped fresh mint, mix until well combined.

Step Seven

Once your flatbread is grilled, top with the fresh fruit mixture. Serve and enjoy your Grilled Njangsa Flatbread immediately!
