What You’ll Need

  • 1 and 1/2 pounds of cleaned Jumbo Prawns
  • 6 skewers
  • 2 cloves of garlic, minced
  • 1 tablespoon of lemon juice
  • 1/4 cup of olive oil
  • 1/4 teaspoon of salt
  • 1/4 teaspoon of ground black pepper
  • 1/2 cup of cassumunar ginger, finely chopped
  • 1 cup of orange marmalade
  • 2 tablespoons of soy sauce
  • 1 tablespoon of fresh lime juice
  • 1 tablespoon of honey
  • 1 tablespoon of cornstarch
  • 2 tablespoons of water
ALLERGENS: Prawns, garlic, soy sauce

Method

Step One

Start by preparing the prawns. Thread the cleaned jumbo prawns onto your skewers and set them aside for now.

Step Two

In a large bowl, combine your minced garlic, lemon juice, olive oil, salt, and ground black pepper. Whisk the ingredients together until fully blended. Add the prawn skewers into this marinade, ensuring each prawn is evenly coated. Cover and let the prawns marinate in your refrigerator for at least an hour.

Step Three

While your prawns are marinating, you can begin to prepare the cassumunar ginger glaze. In a medium-sized saucepan over medium heat, combine the finely chopped cassumunar ginger, orange marmalade, soy sauce, fresh lime juice, and honey. Stir the ingredients together and bring them to a gentle simmer.

Step Four

In a small bowl, dissolve the cornstarch into the 2 tablespoons of water. This will be used to thicken your glaze. Once your glaze is simmering, slowly whisk in the cornstarch-water mixture until it is fully incorporated and the glaze has thickened to your liking.

Step Five

Preheat your grill to a medium-high heat. Once hot, place the marinated prawn skewers onto the grill. Cook for about 2-3 minutes on each side, or until the prawns are opaque and cooked through.

Step Six
