What You’ll Need

  • 6 salmon fillets each 6oz
  • 3 tablespoons of mountain pepper
  • 1/4 cup olive oil
  • Salt to taste
  • 2 limes, juiced
  • 1 lime, for zest
  • 1 cup fresh cilantro leaves, finely chopped
  • 1/4 cup honey

Method

Step One

First, preheat your grill to high heat.

Step Two

While waiting for the grill to heat up. rinse the salmon fillets and pat them dry. In a small bowl, mix together the mountain pepper, olive oil, salt and lime juice.

Step Three

Now, rub this mixture onto the salmon fillets. Ensure that each piece is well coated.

Step Four

Place the salmon fillets on the heated grill. Cook for about 4 to 5 minutes on each side, or until the fish flakes easily with a fork. Make sure you turn them once during cooking.

Step Five

While the salmon is grilling, prepare the lime zest. Using a fine grater, grate the peel of the remaining lime. Be sure to avoid any white pith.

Step Six

In another small bowl, combine the finely chopped cilantro leaves, lime zest and honey. Stir well to mix.

Step Seven
