I’m particularly fond of this recipe because it marries two culinary influences that have inspired my own cooking – the comforting allure of Southern favorites married with the vibrant and bold flavors of West Africa. Enter, Grilled Sausages with Brown Mustard and Onions.

Grilled Sausages with Brown Mustard and Onions

A Taste of Home

While living in Atlanta, my Southern roots were often reminded through the delicious aroma of smoked meats wafting from neighborhood barbecues. Sausages were often the star of the show, grilled to perfection and served on Italian sandwich rolls. In this recipe, we’ve amplified that concept, infusing the flavor profile of the sausages with a homemade mustard sauce that’s tangy, slightly sweet, and gently punctuated with apple cider vinegar and fresh onions.

A Twist on Tradition

Coming from a Nigerian family, food played a substantial role in our daily lives. Spicy, robust, and deeply flavorful dishes were the norm. This recipe reflects a taste of that fusion, where every bite invites you on a cultural journey. The brown sugar and the apple cider vinegar introduce an unexpected note of bright sweetness—a welcome contrast to the tang of the mustard and the savory quality of the onions and sausages.

This dish doesn’t just taste good; it’s also heart-friendly, thanks to the olive oil and the lean protein in the sausages. Moreover, onions are known to contain cancer-fighting compounds and can help control blood sugar.

If you’re looking for pairing options, this dish can traditionally work well with a variety of sides – you can easily pair it with a coleslaw or a roasted potatoes side dish. Alternatively, for a more African influence, partner it with a steaming bowl of jollof rice.

Ahead, a recipe that has captured my heart and palate – a taste of the South mingled with a nod to my Nigerian heritage. I hope you’ll enjoy cooking and eating Grilled Sausages with Brown Mustard and Onions as much as I do!

What You’ll Need

  • 12 links of fresh sausages
  • 2 tablespoons of olive oil
  • 2 large onions, thinly sliced
  • 1/4 cup of brown mustard
  • 1/4 cup of apple cider vinegar
  • 1 tablespoon of brown sugar
  • 1/2 teaspoon of freshly ground black pepper
  • Six 6-inch Italian sandwich rolls
ALLERGENS: Gluten, Mustard

Method

Step One

Start by preheating the grill. Ensure the grill is hot enough for direct grilling.

Step Two

While the grill is preheating, take a large skillet and heat the olive oil over medium heat. Add the thinly sliced onions to the skillet and cook until they become tender and start to caramelize.

Step Three

To the cooked onions, add brown mustard, apple cider vinegar, brown sugar and freshly ground black pepper. Stir these ingredients together and keep cooking the mixture until it becomes syrupy. Keep it on low heat to stay warm while you prepare the sausages.

Step Four

Next, get your sausages and place them on the grill. Cook them over direct heat until they are thoroughly cooked and nicely charred. This should take about 10-15 minutes and make sure you turn them occasionally for an even cook.

Step Five

While the sausages are cooking, split the Italian sandwich rolls and lightly toast them on the grill.

Step Six

Once everything is cooked, place each sausage link into a toasted roll, then generously spoon the onion and mustard mixture over each sausage. Serve immediately and enjoy!
