Why I Love Argentine Grilled Short Ribs

As a seafood connoisseur, you might expect me to be strictly tied to my oceanic cooking roots. Don’t get me wrong, there’s nothing quite like the fresh, salty taste of Maine lobster or the creaminess of a bowl of homemade clam chowder. Yet, branching out from my typical New England fare to something more hearty and robust like the Argentine Grilled Short Ribs is an exciting venture that broadens my gastronomic horizons.

Grilled Short Ribs

More than just Seafood

I won’t deny that my daughters, Erin and Samantha, and I are seafood enthusiasts due to our coastal origins. Still, to truly appreciate the complexity of worldwide cuisines, we sometimes crave flavors outside of our culinary comfort zone. This Argentine Grilled Short Ribs recipe is one such departure. But herein lies its charm – it’s a dish that takes us on a fresh journey every time, allowing us to explore beyond our coastline and immerse ourselves in a new culinary landscape.

Inspiration behind the Recipe

Inspired by renowned Argentine chef Francis Mallmann, this recipe is a delicious amalgamation of robust flavors, where succulent beef short ribs are embraced by the smoky notes of paprika and the fiery kick of chili flakes. Finished with a zesty chimichurri sauce, this meaty masterpiece serves a feast for the senses.

Creating a Culinary Journey

The beauty of this Argentine Grilled Short Ribs recipe is not merely in its hearty flavors but the culinary journey it takes us on. While so different from the ocean-fresh seafood dishes we’re accustomed to, it’s the evocative richness of these grilled ribs that offer a melt-in-the-mouth experience like no other.

If you’re familiar with American-style barbecued ribs, this recipe offers a fresh take – introducing the vibrancy of Argentine flavors. Serve with typical sides like Provençal Tomatoes or a fresh green salad, and you have a meal that’s both comforting and delightfully savory. Better yet, pair it with a glass of Argentine Malbec to truly embrace the South American vibes.

Every gourmet journey presents an opportunity to step outside the familiar palate. This Argentine Grilled Short Ribs recipe is my culinary stepping stone to the flavorsome grill scenes of Argentina. I can’t wait to take my readers and their taste buds on this mouthwatering South American exploration.

What You’ll Need

  • 6 lbs bone-in beef short ribs
  • 1 cup extra virgin olive oil
  • 1/2 cup red wine vinegar
  • 4 cloves garlic, minced
  • 2 tablespoons dried oregano
  • 1 tablespoon smoked paprika
  • 1 tablespoon coarse salt
  • 2 teaspoons black pepper
  • 2 teaspoons red chili flakes
  • 1 tablespoon fresh parsley, finely chopped
  • 1 lemon, zested and juiced
  • Chimichurri sauce, for serving
ALLERGENS: Garlic

Method

Step One

Begin by preparing the marinade for the short ribs. In a large bowl, combine the extra virgin olive oil, red wine vinegar, minced garlic, dried oregano, smoked paprika, coarse salt, black pepper, red chili flakes, finely chopped fresh parsley, the zest and juice of one lemon. Stir all the ingredients until they are fully incorporated.

Step Two

Place the beef short ribs in a large, sealable plastic bag. Pour the prepared marinade into the bag, ensuring that all the ribs are completely covered. Seal the bag and gently shake it around so the marinade can permeate every part of the ribs. Place the bag in the refrigerator and let it marinate for at least 6 hours, or preferably overnight.

Step Three

Preheat your grill to a medium-high heat. Once the grill is heated, remove the ribs from the marinade, shaking off any excess. Place the ribs on the grill and cook for about 5 minutes on each side, until they have a nice char and are cooked to your preferred level of doneness.

Step Four

Once the ribs are cooked, remove them from the grill and let them rest for a few minutes. This allows their juices to redistribute throughout the meat, ensuring a moist and flavorful result.

Step Five

Serve the grilled short ribs with a side of Chimichurri sauce for added flavor. Enjoy your meal!
