What You’ll Need

  • 4 pounds of beef short ribs
  • 1 cup of soy sauce
  • 1 cup of brown sugar
  • 1/2 cup of water
  • 1/4 cup of mirin (sweet rice wine)
  • 1 medium onion, finely chopped
  • 4 cloves garlic, finely chopped
  • 2 tablespoons of sesame oil
  • 1 tablespoon of ginger, finely grated
  • 1/2 teaspoon of black pepper
  • 2 green onions, thinly sliced
  • 1 tablespoon of sesame seeds

Method

Step One

Start by preparing the marinade. In a large bowl, combine the soy sauce, brown sugar, water, mirin, chopped onion, chopped garlic, sesame oil, finely grated ginger, and black pepper. Stir all the ingredients until the brown sugar has completely dissolved into the mixture.

Step Two

Add the beef short ribs to the prepared marinade. Make sure that each piece is fully coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 3 hours, or preferably overnight.

Step Three

After marinating, preheat your grill to medium-high heat. Remove the short ribs from the marinade, letting the excess drip off. Remember to save the marinade for basting.

Step Four

Grill the short ribs for about 4-5 minutes on each side, basting them with the reserved marinade as they cook. You should achieve a nice char and the ribs should be cooked to medium doneness.
