As a Boston-born chap with a rich Irish ancestry, the merging of New England’s sumptuous seafood and Irish heartwarming comfort food has always gifted me an extraordinary palate. Unsurprisingly, this evocative fusion ushered me into the fascinating world of gastronomy, igniting an unquenchable passion for native and foreign cuisines alike. Today, food isn’t just a mere form of sustenance for me, but a canvas of culinary art and heritage. Among my coveted specialties is the Grilled Steak with Cubeb Pepper Rub.
The Stroke of Genius Behind the Recipe
This fruit-infused recipe is an homage to the subtle yet tantalizing blend of sensory experiences that a single bite can provoke. The harmonious marriage of spicy cubeb pepper rub on the tender steak and the refreshing, slightly acidic tang from cherries, apples, and oranges, combines into a gastronomic masterpiece that leaves the taste buds on a joy ride of flavors. Sure, there’s a resemblance to your typical grilled steak, but that additional fruity note is a twist you won’t see coming — and it’s one that gets the taste buds tingling every single time.
Nutritional Brilliance
But this isn’t all about tantalizing the taste buds, each component in the Grilled Steak with Cubeb Pepper Rub is backed by impressive health benefits. Steak, being a rich source of protein, supports muscle growth and repair. The fruit accompaniments are not just aesthetically pleasing or powerful flavor amplifiers – They’re packed with fibers, antioxidants, and essential vitamins. The cubeb pepper, a less-familiar spice in many kitchens, surprisingly contains anti-inflammatory and antimicrobial properties. Truly, the indulgence here is more than skin deep. It’s flavorful, nourishing, and wholesome in each bite.
This beauty pairs well with a chilled glass of white wine. And if you’re in for a feast, consider making a side of buttery chicken or creamy lemon zucchini pasta. It’s a combination that’s tried, tested, and adored in our household and has been a winning idea on numerous occasions when Laura and I have entertained. Passionately crafted, our Grilled Steak with Cubeb Pepper Rub is a testament to our love for delicious, straightforward, but layered, distinctive flavors.
So, in essence, this recipe isn’t just a dish – it’s a story. A tale of old family traditions, enriched by exploration of new culinary horizons. It’s an unforgettable union of slightly citrusy, exotically spicy, and unmistakably hearty – a symphony of flavors marked by the crispness of New England, warmth of Irish homeliness, and a hidden touch of the exotic. It’s an ode to the beauty of culinary innovation – pushing boundaries, without losing an ounce of soulful comfort.
What You’ll Need
- 3 lbs Rib-eye steak
- 2 tbsp Cubeb pepper, freshly ground
- 1 tbsp Kosher salt
- 1 tbsp Garlic powder
- 2 tbsp Brown sugar
- 2 tbsp Olive oil
- 1 cup Cherries, pitted
- 2 Apples, sliced
- 2 Oranges, sliced
- 1 cup White wine
- 1 tbsp Thyme, fresh
- 1 tbsp Rosemary, fresh
Method
Step One
Mix together the freshly ground Cubeb pepper, Kosher salt, garlic powder, and brown sugar in a small bowl. This will serve as your rub for the steak.
Step Two
Take your Rib-eye steak and gently rub the mixture from step one on both sides. Ensure the steak is evenly covered. Allow the steak to sit and marinate for around 15 minutes.
Step Three
While the steak is marinating, heat up your grill to medium-high heat.
Step Four
Lightly coat the steak with olive oil before placing it on the heated grill. You can grill the steak as per your liking, anywhere between 4-7 minutes per side for a medium-rare to well-done steak.
Step Five
While the steak is grilling, start preparing the fruit topping. In a medium-sized pan, combine the pitted cherries, sliced apples, sliced oranges, and white wine. Cook this over medium heat until the fruits have softened and the wine has reduced by about half.
Step Six
Add the fresh thyme and rosemary to the pan. Stir the mixture and simmer till the sauce thickens.
Step Seven
Once the steak is cooked to your liking, remove it from the grill and let it rest for a few minutes before slicing into it. This allows the juices to redistribute throughout the steak.
Step Eight
Serve the grilled steak hot, topped with the prepared fruit and herb mixture. Enjoy your Grilled Steak with Cubeb Pepper Rub!
