What You’ll Need

  • 3 large yellow onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 cups mixed salad greens
  • 2 ripe avocados
  • 1 cup cherry tomatoes
  • 1/2 cup feta cheese
  • 1/4 cup pine nuts
  • 3 tablespoons balsamic vinegar

  • 1 tablespoon Dijon mustard

Method

Step One

Start by heating the grill to a moderate heat. While the grill is heating, peel the yellow onions and cut them into thick slices, about 1/2 inch each.

Step Two

Place the onion slices on a tray or large plate. Drizzle them with the 2 tablespoons of olive oil and give them a good sprinkle of salt and pepper. Ensure the onion slices are sufficiently coated.

Step Three
