  • 2 tablespoons vegetable oil
  • 1 medium onion, thinly sliced
  • 2 large carrots, peeled and thinly sliced
  • 4 cloves garlic, minced
  • 2 red chili peppers, de-seeded and thinly sliced
  • 1 cup Hamburg parsley, chopped
  • 1 cup bell peppers, any color, thinly sliced
  • 1 cup fresh pineapple, chopped
  • 2 large ripe tomatoes, chopped
  • 1/3 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1/4 cup cold water
  • 2 cups cooked brown rice, for serving

Method

Step One

Begin by heating the vegetable oil in a large skillet or wok over medium heat. When the oil is hot, add the sliced onion and carrots, and cook them until they start to soften, which should take about 5 minutes.
